Potato Heart Dumplings in Spicy Curry, Steamed Basmati Rice, Salad and Rosemary Avocado Sorbet - Vegetarian Date Night Dinner

For this Valentine's Day, we decided to go Vegetarian. Since it was vegetarian, it was tough to decide upon a great menu to please myself and my husband. Finally, with my sister's help, I came up with this menu - Potato Heart Dumplings in Spicy Curry, Steamed Basmati Rice, Salad and Rosemary Avocado Sorbet. The juice we decided to include in this meal was Rose Lemonade which was awesome. My husband loved it. I gave the the Rosemary Avocado Sorbet to my toddler later on and she just finished it up. I was super super happy! Please do try it and am sure you will love it too. Thank you.

Make Potato Heart Dumplings

Ingredients:

  1. Boiiled potato - 2 medium size
  2. Onion - 1/2 Cup
  3. Cilantro - 1/2 Cup
  4. Garam Masala - 1 tsp
  5. Chilly powder - 1 tsp
  6. Ginger paste - 1 tsp
  7. Arrow Root Powder - 3 tbsp
  8. Salt - to taste

Preparation STeps:

  1. Mash the boiled potatoes.
  2. Add all the remaining ingredients and mix well.
  3. Make heart shaped dumplings.
  4. Fry in oil and transfer to a tissue paper so it soaks extra oil.
  5. The Potato Heart Dumplings are ready!

Make Spicy Sauce

Ingredients:

  1. Fresh Cream - 1/2 Cup
  2. Oil - 1 tsp
  3. Onion - 1 Cup
  4. Tomato - 1.5 Cup
  5. Cilantro - 1/2 Cup
  6. Garam Masala - 1 tsp
  7. Coriander powder - 2 tsp
  8. Chilly powder - 1 tsp
  9. Cumin - 1 tsp
  10. Salt - to taste
  11. Turmeric powder - 1 tsp
  12. Potato Heart Dumplings

Preparation Steps:

  1. Heat oil in a pan.
  2. Put cumin seeds
  3. Add chopped onions and mix it is is pink.
  4. Add tomatoes. Mix well for a minute
  5. Add all the dry spices and salt.
  6. Cook until it is well done.
  7. Once it cools, blend to a fine paste.
  8. Pour the blended paste onto a pot on high flame.
  9. Pour fresh cream and once it comes to a boil, turn off heat. The Spicy Sauce is ready!

Make Steamed Basmati Rice

Ingredients:

  1. Basmati Rice - 1 Cup
  2. Water - 2 Cups
  3. Salt - 1 tsp
  4. Oil - 1/2 tsp

Preparation Steps:

  1. Soak rice for 30mins.
  2. Post 30mins, discard the soaked water.
  3. Boil 2 cups water in a pan along with salt and oil.
  4. Transfer the soaked rice into the water.
  5. Once it starts boiling, turn off heat and cover the pot for about 10mins.
  6. Serve hot.

Steamed Basmati Rice is ready!

Make Salad

Ingredients:

  1. Cucumber - 1 Cup
  2. Carrot - 1/2 Cup
  3. Onion - 1/2 Cup
  4. Tomato - 1/2 Cup
  5. Cilantro - 1/2 Cup
  6. Mozzarella Slice - 1
  7. Lemon Juice - 1.5 tsp
  8. Chilly Powder - 1/2 tsp
  9. Salt - to taste

Preparation Steps:

  1. Chop all the veggies.
  2. Prepare the salad dressing - lemon juice, chilly powder and salt
  3. Mix all.
  4. Chop some mozzarella and mix that too.

Salad is ready!

Make Rosemary Avocado Sorbet

Ingredients:

  1. Milk - 4 Cups
  2. Avocado - 2 medium size
  3. Rosemary - 2 tsp
  4. Arrow root powder - 2 tbsp
  5. Sugar - 5 tbsp
  6. Lemon juice - 1 tsp

Preparation Steps:

  1. Boil milk in a pot so it reduces to half
  2. Add arrow root powder solution inorder to thicken the milk.
  3. Mix well.
  4. Add sugar and turn off the heat.
  5. Add rosemary leaves and mix again. Let it cool.
  6. Remove avocado flesh and mash it.
  7. Pour lemon juice inorder to prevent avocado from de-colorizing.
  8. Clean the avocado shell, wash it and keep it aside so we can use it for serving.
  9. Transfer the avocado flesh in a blender.
  10. Pour the prepared milk solution.
  11. Blend well to a fine paste. The sorbet mix is ready.
  12. Pour in the cleaned avocado shells and freeze. Serve chilled.

The Rosemary Avocado Sorbet is ready!
