Potato Frittata

Potato Frittata is a baked potato dish which can be enjoyed as a main course or a side dish.

Ingredients

3    Large Potatoes
1    Onion (Medium)
1/2 Tea spoon grated nutmeg
1    Can of table cream
1    Cup (4 oz) of shredded Mozerella Cheese
1    Cup (4 oz) of shredded Parmesan Cheese
1/2 Tea spoon fresh ground pepper
1    Block of 4 oz butter
      Salt to taste
      Aluminium Foil

Wash & Peel Potatoes. Then Cut Potatoes in Thin Slices of About 1 Cm

Take a Baking Tray and Arrange Potatoes to See How Many Slices Will Fit in It.

Now that you know how many slices are needed, keep them aside.

Take a Deep Pot and Add Cold Water Enough to Cook the Potato Slices

While Boiling Potatoes Add a Tea Spoon of Salt Which Will Help in Cooking Faster and Keeping Them Firm.

It took me about 15 minutes to cook the potatoes in high flame.

Now to check if the potatoes are done, you can pierce a knife. If the knife goes through then the potato is cooked

Take the Potatoes and Drain Them in a Sieve. You Can Add Some Cold Water to Cool Down

Take the Onion and Grind to a Fine Paste (you Can Use a Grinder or a Grater)

Now Grate the Nutmeg.

Take a Cooking Pot Deep Enough to Cook the Sauce. Put Butter. Let It Melt, Add Nutmeg Powder, Onion Paste, Freshly Ground Pepper, Salt and Tin of Table Cream.

Mix all the ingredients together and boil them until it becomes a thick sauce like consistency.

Keep stirring the sauce continuously or it will burn and stick to the pot.

Useful tip: while cooking the sauce, cook on a high temperature first and when it starts boiling, reduce to a low temperature until sauce becomes thick.

Now Arrange the First Layer of Boiled Potato Slices in the Baking Dish.

Spread the Sauce Evenly Over Potatoes and Sprinkle Both (Mozzarella and Parmesan) the Cheeses on Top of It.

Repeat this arrangement until the baking tray is full keeping in mind that the final layer has to be cheese on top of sauce.

Now Cover the Dish Up With Foil.

Getting the Oven Ready

Pre-heat the oven to 350 degrees fahrenheit. When oven is ready slip the baking dish into it and bake for about 35 minutes with the foil on. After 35 minutes, remove foil and put on broil and bake for another 7 to 10 minutes. Keep checking the top to see its not getting burnt.

Broil until it is evenly brown on top. Once done, remove the baking dish and put it on a cool rack for about 10 minutes.

Serve and Enjoy!
