Potato Cakes With Left Over Potato

Today we are making potato cakes.

These are a great way of using up some left over mashed potatoes and also a nice dinner side to help bulk out a meal.

Serving suggestion: These would taste great with a rich meat stew!

Ingredients

You will need:

  • 1000 grams of mashed potato
  • 380 grams of flour
  • 130 grams of butter
  • 6 eggs
  • 1/4 teaspoon of nutmeg
  • 4 tablespoons of milk
  • 2.5 teaspoons of baking powder
  • Salt and pepper to taste

The Dry

Whisk all the dry ingredients together in a bowl.

In a large bowl, break the mashed potato up with a large spoon, then mix in the dry ingredients until thoroughly combined.

Egg and Spice

Beat 5 eggs then add to the potato mixture along with the salt, pepper, and nutmeg. Continue to mix this in until it forms a sticky dough.

Pat a Cake

Dump out the dough onto a floured surface and taking small handfuls, pat into small cakes, about 1.5 cm high and 8 cm across. I would suggest for this part to flour your hands, as the dough really is quite sticky! I made 16 cakes at the size given as well as three smaller cakes.

Place the cakes onto a greased tray.

Glaze and Cook

Melt the butter and whisk the last egg, then combine the egg and butter and brush over the tops of the cakes. Place the tray in the middle of the oven and bake for about 30 minutes in a 200 degree C (392 F) or until risen and golden.

You can serve these straight away or leave to cool a little on a cooling rack until warm.

Very versatile side, quite easy to prepare and a fantastic way to use up left over mashed potato.
