Poppy Seed Breakfast Rolls
Make some delicious poppy seed rolls for breakfast or snack. You can eat them with butter, marmalade, dipped in tea or just like that without anything.
We call them Loupáčky in Czech and they are a delicious lightly sweet pastry. Long time ago the poppy seed rolls bought in stores used to be good, in the last years they’re getting bigger, full of air and without taste. This is the recipe for poppy seed rolls we used to know as kids.

Supplies
For 8 pieces:
- 200 g/7 oz of finely ground flour
- 200 g/7 oz half-coarse flour
- 60 g/2.8 oz powder sugar
- 70 g/2.5 oz pork-fat (or unsalted butter)
- 2 egg yolks
- 170 ml/5.75 oz of milk
- ½ tsp of salt
- 20 g/0.9 oz active yeast
- 1 egg for brushing
- poppy seeds
What the heck is half-coarse flour? Or finely ground? Don’t worry, you can use your regular all-purpose flour. However, if you want to do it the absolute right way, here’s the Czech Flour Guide that will help you navigate through the Czech flour “system”.
Make Dough and Roll!
Let’s prepare the starter. Warm up the milk to lukewarm, add 1 tsp of sugar, 1 tsp of flour, yeast and let it work in a warm environment.
In a bowl, combine flour, sugar and salt, add the started and whisked yolks. Mix a little, then add pork fat and knead in hand. Cover with a kitchen rug and let it rise for 30 minutes. Then knead in hand, cover again and let it rise for about an hour.
Roll out the dough to make a circular shape of about 30 cm in diameter. (photo 1)
Cut it in 8 equal pieces as if you were cutting a cake. (photo 2)
Stretch each piece length a little and then roll it in from the edge. (photo 3)
Roll the roll a little with your hand. (photo 4)
Curve it. (photo 5)
Press the tips in. (photo 6)
Place the rolls on a tray with a baking sheet and let rest for another 10 minutes. (photo 7)
Bake
Brush with whisked egg and sprinkle with poppy seeds.
Preheat the oven on 200 °C, lower it to 180 °C and bake for 15–20 minutes.
