Popeye's Revenge - Raw Spinach Salad
You may have enjoyed one too many cookies and far too many cocktails over the holiday season. It's time to flush some of that junk from your system.
This salad is loaded with SUPERFOODS.... Ohhhhh, SUPERFOODS!

The Goods
1/2 lb spinach
1/2 lemon
2 cloves garlic
1 tablespoon extra virgin olive oil
1/2 teaspoon cardamom
1/2 teaspoon smoked paprika
salt and pepper
hot sauce

Spinach
Add the spinach to your food processor. If it doesn't all fit, don't worry, you can add the rest after you start pulsing the food processor.
You may be concerned about oxalic acid in raw spinach. I am not :).
Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A (and especially high in lutein), vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2, calcium, potassium, vitamin B6, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. Crush and peel the garlic cloves. Add to the food processor.
Cut the lemon in half. Squeeze the juice into the food processor.

Pulse
Pulse the food processor. You may need to remove the top a couple times and reorganize the spinach to make sure it all gets chopped. If you couldn't fit all of the spinach in earlier, add it now. Taste it, add more spices if needed.
