Poor Woman's Breakfast
With my kitchen demolished for remodeling I've had to be creative about food. We used to eat this for breakfast in Brasil because it is dirt cheap to make.
Ingredients:
- 2 overripe plantains (they can be pure black and still good inside)
- 2 tablespoons of butter
- 1 tablespoon of granulated sugar (you can use honey too)
- Cinnamon
Cut the plantains in half. Put them in simmering water for about 10 minutes or until you see the insides oozing out of the peel.
Take them out of the hot water and plate them. With a sharp knife cut them lengthwise. On the cut put some butter, sprinkle the sugar and cinnamon on top. Serve hot.
