PizzaVeg + Mozzarella 100% Plant Based
Hi everyone. Then, Pizza margherita with homemade vegan mozzarella (100% plant based).
Why?
There are several products on the market that "simulate" mozzarella but honestly I don't like them.
That's why I experimented with this type of mozzarella using vegetable milk and some thickeners. The result is really excellent and makes every pizza tasty, for everyone's palate, vegan and otherwise.
In this tutorial we will make the dough for the true Neapolitan pizza, the veg mozzarella which we will then form inside molds (together with the instructables mascot) and then we will cook the pizza in an electric oven that is like a wood oven.
The ingredients and tools:
For the dough:
- 1,8 kg Quality 0 flour
- 1 lt water
- 50 gr salt
- 5 gr Brewer's yeast
- kneading
- "Panetti" boxes
For the 100% plant based mozzarella:
- 500 cl Soy vegetable milk
- 150 cl Sunflower oil
- 40 gr Tapioca starch
- 5 gr Food yeast
- 10 gr carrageenan
- Lemon juice
- Silicone forms
- Sac a poche Whisk
- Pan
Make Mozzarella 100% Plant Based
We pour all the ingredients in a saucepan on the stove, except the lemon juice that we will put at the end of cooking.
To better mix the ingredients we use an immersion beater.
While everything is cooking, with a ladle we constantly turn the mixture so as not to stick to the sides of the pan and risk burning it.
Slowly that cooks we will notice that the mixture thickens (as in the attached photos).
Total cooking must not exceed 10 minutes.
As soon as we turn off the stove, insert the lemon juice and continue to turn the mixture.
Separately we will have prepared the sacapoche and inside we will pour the hot mixture (be careful to use gloves to not burn yourself).
Forming Mozzarella Into Silicone Stamp
Now we have the pastry bag full of compost and, after cutting the tip, we can pour into the appropriate molds.
In a mold I inserted the pin of the instructables mascot to be able to make the shape.
It will take about 60 minutes to have the firmed and cooled forms.
We take the shape where we put the mascot, we eliminate the mascot and cut with a sharp knife all around to have the 3D mozzarella mascot.
We also cut a form of mozzarella into strips that we will use on pizza.
Make Dough and Place for Leavening and Maturation
Premise:
To have a light and digestible dough I let it rise for at least 24/48 hours.
To do this, you must use quality flours and use the refrigerator for at least 3/4 of the duration of the leavening.
Then:
Pour the flour into the mixer first, then the water, the yeast and finally the salt.
Turn the dough for about 15/20 minutes.
Put the dough in the crates (see photo) and after about 4/5 hours put it in the refrigerator for at least 20 hours.
After 20 hours we take the box with the dough and leave it at room temperature for about 1 hour and then we make the so-called "dough balls" (see photo). Each piece of about 280 grams will be a pizza.
We put all the dough balls we made in the boxes and close them so as not to let the air in.
We wait another 4/5 hours and we will be ready to cook our pizzas.
Make Pizza at 450°C And... Gnam!
Well, it's time to make pizza.
We take one dough ball, spread it with our hands on the table, spreading it like a disk making it as round as possible.
With a ladle we take the tomato sauce and pour it in the center making sure to leave the space on the edge which will then be the cornice of pizza.
We put, on the top of the tomato, pieces of vegan mozzarella.
Now we put the pizza in the oven, preheated to the maximum temperature (this oven reaches 450 ° which is the temperature reached by the wood oven).
With this high temperature, the pizza will cook in no time ... about 90 seconds.
At the exit, a drizzle of olive oil, a few basil leaves and the instructables mascot :))
