Pita Di Parma Chips

This is an extremely simple chip to make.  Nibble them on their own or use with a dip.  

This is what you will need:
2 pitas
4 oz butter
grated Parmesan
shredded Parmesan
garlic cloves
Cajun seasoning

Preheat your oven to 300 degrees Fahrenheit.   Insert a Pita in your microwave and microwave at high for approximately 30-40 seconds, depending it's  power.  The Pita will puff up.  There is no way to photograph this.  Remove the pita which will be extremely hot to a cutting board and separate into two halves.

Melt butter in a small pan.  Squeeze a couple of cloves of garlic into the melting butter along with a tsp of Cajun seasoning, or maybe just cayenne or smoked Chipolte peppers.  Stir in grated Parmesan cheese.

With a long thin knife separate the pitas in half.

Brush the inside of each pita half with the Parmesan garlic butter and sprinkle additional Parmesan over the top

Cut the pita halves into wedges and place on a half sheet cake pan.  Bake on ungreased baking sheets for 10 minutes, or until golden brown.  Serve plain, or with dips.

Notes:  Store in airtight containers.  Re-crisp in a warm oven.  They will keep three weeks, I am told.  Since there have never been any left over, this claim has not been proven.
