Pique De Pina or Pique Boricua
This is a recipe for pique boricua or pique de piƱa. It is a puertorrican recipe for a hot pineapple flavored vinegar that can be used to make any meal hot. It tastes great on top of rice and beans. This is a great way to use the pineapple skin before it is dumped on your compost pile. I need to warn you that it is very hot and you may use a little bit at a time.
Ingredients
You will need:
A large glass jar with the lid.
A few clean bottles.
1 2/3 cups of water
4 to 6 oz. of pineapple skin
8 chili peppers
4 garlic
1 tablespoon of Black pepper
1/2 tsp. of dry oregano
1/8 tsp. of salt

Instructions
Put the pineapple skin in the large glass jar. After boiling the water pour it inside the glass jar. Close the lid of the jar and allow the pineapple skin to ferment for 24 hours.
Put all the other ingredients in a glass bottle. Strain the pineapple skin and pour the water from the jar to the bottle with all the other ingredients. Close the lid of the bottle and allow everything to ferment in the refrigerator at least five (5) more days. Enjoy!

A Faster Way
Another way to make this recipe is by combining 1 cup of cider vinegar and 2/3 cup of pineapple juice, with the rest of the ingredients in a bottle and then keep the mixture for five days in the refrigerator.
