Pinwheel Saugage With Provolone Cheese, Accompanied With Rustic Potatoes and Grilled Peppers With Eggs

In this instructable, I will show you an exquisite recipe to enjoy the weekend.

It is a very simple and quick dish to grill.

This type of food is common in Italy, Spain, Mexico, Latin América, etc.

First I will teach you how to make a little appetizer to enjoy while making the main dish and then I will explain how to prepare and cook the main dish on the grill.

I really enjoy cooking on the barbacue, but discovered that it is not only good for grilling beef or poultry but also vegetables, potatoes, etc.

Let's start because we are hungry! 😋

Tools + Ingredients

Here’s everything you’ll need, for 3/4 diners:

  • Charcoal grill (*)
  • (2) Pinwheel saugage 450/500 gr each one.
  • (2) Slices of provolone cheese 1 / 1,5 cm of thickness.
  • (3) Potatoes.
  • (1) Red pepper (**).
  • (4) Egs.
  • (1) Lemon (optional see TIP in step 4).
  • (1) Frying pan.
  • Olive Oil.
  • Salt.
  • Peppercorns.
  • Papikra.
  • Ground chili pepper.
  • Spatula.
  • Kitchen clamp.
  • Baguette bread.
  • Charcoal.
  • Scrap Wood.
  • Paper.
  • Matches.

Notes:

(*) In my case I used an indoor charcoal grill, but it can perfectly be done with other types of barbacue.

(**) With each red pepper you get two servings.

​Preparing the Charcoal and Others Tips

- Properly clean the grill.

- Put scrap of wood as seen in the photo.

- Put the charcoal on top.

- Put paper under the scrap of wood.

- Light with a match.

- Enjoy how the fire is burning.

- When the coal burns, the flame is extinguished and the time of the embers begins, which is lit and very red.

- There begins the work of gathering the embers with the shovel and putting them under the irons of the grill where we will add the pieces.

- The meats are put on the irons About 10 minutes after we put the red embers under the grill, we will see that they begin to turn an ash white color.

- That is the moment to add the meat because the fire is already prepared for the roast.

- And remember that, on the side, we continue to make embers.

- The heat that it gives to the meat is regulated by adding or removing embers from the ones we have under the irons.


Charcoal preparation time for cooking:

⏱ 40/50 minutes depending on the type of charcoal.

NOTES:

-1 kg charcoal per kg of meat

- Do not take this step into account if you have a different type of barbecue with gas, electric heating, etc.

Preparing a Little Appetizer

To cook with Barbecue take your time and enjoy while cooking 😉

Nothing better than a little appetizer.

- In a small bowl make a quick mixture of olive oil, ground chili pepper and salt.

- I mixed lightly.

- Take a strip of baguette bread and cut it into slices with a knife.

- Place the bread slices in a metal baking dish.

- Apply the mixture with a kitchen brush them and then bake at an approximate temperature of 180° for 15/20 minutes.

- Remove from the oven and serve on a wooden board.

It can be accompanied with cream cheese and accompanied with your favorite drink (bear/wine).


Cooking Time:

⏱ 15/20 minutes.

Cooking the Rustic Potatoes

- Wash the potatoes, but leave them with skin.

- Cut into slices no greater than 5/7 mm thick.

- Add olive oil / salt / peppercorn to taste.

- Add papikra.

- Place the potatoes on the grill (seasoned side up)

- Let cook on one side.

- Check the underside of the potatoes for doneness and once cooked back.

- You can use a fork and poke the potato to see if it is cooked inside.

- Cook on the other side, adding olive oil to the top surface of the potato.

- Remove when cooked.


Cooking time:

⏱ 60 minutes. This should be the first thing to put on the grill ;)

TIP: In the photos you can see that I am grilling lemons. This is totally optional. The hot lemon when squeezed is used 100% and the potatoes already ready with a few drops of lemon are delicious.

Cooking the Peppers With Egg

- Wash the pepper.

- Cut it in half and remove the seeds and calyx.

- Add salt.

- Attach two toothpicks to the ends so that it looks like a “cradle” to later hold the egg and prevent it from spilling.

- Place the two halves on the grill with the inside of the pepper facing down.

- Let cook on one side.

- Check the doneness of the bottom side of the peppers and once cooked back.

- Let cook on the other side.

- When it's cooked and hot, add a whole egg.

- Cook until you see that the egg is well cooked.

- Remove when cooked.


Cooking time:

⏱ Peppers 20 min one side / 10 min other side.

⏱ Eggs into Peppers 15 min.

TIP: When doing it for the first time, if you want, you can remove the hot peppers and support them on a board, add the eggs and place them back on the grill.

Cooking the Sausage and Provolone Cheese.

- Carefully place the sausage on the grill.

- Let cook on one side.

- Then cook on the other side.

- At the same time put a frying pan on the grill and inside place the provolone cheese.

- Let heat until you see the cheese melt on one side.

- Back and cook on the other side until the cheese melts on that side.

- Remove the sausage and place on a wooden board or plate.

- Remove the melted provolone cheese and add on top of the sausages.

- Cut the sausages to make two servings.


Cooking time:

⏱ Pinwheel Saugage 45 min.

⏱ Provolone Cheese 5/7 min one side, 3/4 min another side.

Tip: To facilitate the cooking of the sausage, you can place two wooden sticks holding the sausage. I haven't used them because sausages without sticks cook better on the sides.

When cooking, keep in mind that due to the cooking times of the potatoes, peppers and the sausage, for example, you should start with the potatoes much earlier than with the rest.

For the serving dish to be hot, you must remove everything at the same time: the sausage with the egg, the potatoes and the pepper with the egg.

- On a plate place the sausages and provolone cheese.

- Add 4/5 roasted potatoes and top them with a pinch of olive oil and salt.

- Add a bell pepper with egg.

- Decorate with some green leaf (I chose in this case a bay leaf).

- Enjoy 😉
