Pineapple Upside-Down Cake
In this Instructable, I will show you how to make a pineapple upside-down cake. This easy pineapple upside-down cake recipe is so yummy. You can serve it warm, room temp, or chilled, with vanilla ice cream if you like. If I can do it you can do it. Let's get baking!

Ingredients:
- 1/4 cup of melted butter (55g)
- 1/2 cup packed light brown sugar (100g)
- Pineapple rings (about 7 slices)
- Maraschino cherries (about 7 of them, or use more if you like)
Cake Batter:
- 1/2 cup softened unsalted butter (113g)
- 3/4 cup white granulated sugar (170g)
- 2 large eggs
- 1 tsp. vanilla extract (5ml)
- 1/4 cup whole milk (or use whatever kind of milk you want) (60ml)
- 1/4 cup pineapple juice (60ml)
- 1 3/4 cup all-purpose or cake flour (224g)
- 1 tsp. baking powder (4g)
- 1/2 tsp. salt (2g)
Tools:
- Hand mixer or stand mixer
- spatula
- large bowl
- 9" round cake pan with sides buttered
- sheet pan
- cake knife/spatula
Prepare the Pan
First, preheat the oven to 350 F/176 C. Next, butter the sides of a 9-inch cake pan. No need to butter the bottom of it. Now melt the butter and pour it on the bottom of the pan and then sprinkle on the brown sugar. You can also just combine the brown sugar and butter in a bowl and make a paste and then spread it out on the bottom. Next, add 7 slices of pineapple rings. In the holes add the cherries. If you like you can fill in any gaps with more cherries and place pineapple slice halves around the edges.
Note: Buy the pineapple rings that come in juice not syrup.
Mix the Wet Ingredients
Now in a large bowl add the softened butter with the sugar and cream them together with a hand or stand mixer. You may also just use a whisk. Next, add in the eggs and mix them in. Scrape the sides of the bowl as necessary throughout this process. Then add in the vanilla extract, milk, and pineapple juice. Just save the pineapple juice from the can. Mix until well combined.
Mix in the Dry Ingredients
Now using a sifter or sieve combine the flour, baking powder, and salt and sift them into the cake batter. You may use the mixer but stop just before completely combined and then finished mixing with a wooden spoon or sturdy spatula, this will ensure we don't overmix the batter.
Pour, Bake, and Cool
Now, pour the cake batter over the pineapple layer, which will wind up being the top of the cake. Spread out the cake batter so it is flat and then place the cake pan on a sheet pan. This makes it easier to move the cake pan and catches any drips that may bubble over the pan. Bake in a preheated oven, 350 F/176 C, for 30 to 50 minutes. Check it at 30 with a toothpick. When it comes out clean it is ready. If it is getting too brown on top cover it with aluminum foil and continue baking. Once out of the oven allow it to cool for 15 minutes.
Flip It!
After the pineapple-upside down cake has cool, run a cake spatula or knife around the edges to loosen the cake. If you buttered it, it should not stick very much. Grab a plate and place it over the top and then holding both the plate and cake pan flip it over. Hence the upside-down cake! Give the bottom of the cake pan a few taps to help release the cake and then lift it up. There you go and an amazing cake!
Serve It Up!
You can serve the cake while still warm, or allow it to cool further to room temperature, or if you want to you can chill it and eat it cold. Add ice cream too if you like. Enjoy! :)
