Pineapple Chutney

This goes great with any grilled food and most Caribbean dishes.

Ingredients

Pineapple Chutney
2 -3 servings

8 oz can crushed pineapple ,drained 1 green onion chopped ,1 tbsp chopped bell pepper red or green, big pinch of flaked coconut , sweetened or unsweetened (I prefer the sweetened), Tabasco sauce to taste , 1/4 tsp grated ginger 1 1 /2 tsp rum, a squeeze of lime juice ,salt and white pepper.

Add all ingredients together in bowl and cover.Keep at room temperature till ready to serve.

I really don't measure so this is more of a matter of personal taste .
So feel free to use more or less of any of the ingredients.For instance I use three shakes of Tabasco but you might want to start with one. I also like a lot of coconut.Also fresh ginger is must stronger then dried and tastes different.Try using fresh if you can.
