Pina Colada Cookie Bars

Ingredients
15 ounce Yellow cake mix
1-1/2 cups old fashioned Oats
3 eggs (2 eggs in the crust and 1 egg in the filling)
14 ounce can sweetened condensed milk
7 ounce bag grated coconut
20 ounce can crushed pineapple
6 ounce bag Macadamia nut pieces
1 stick butter
1 teaspoon vanilla
2 cups powdered sugar
12 ounce bag white chocolate chips
Crust
Place 1-1/2 cups old fashioned oats in the blender and blend for 15 seconds, until the oats turn into a flour-like consistency. Mix together the cake mix, oatmeal flour, softened butter and 2 eggs. Stir in 1 teaspoon vanilla.
Combine with a pastry blender or fork.
Set aside 1/2 cup of the crust mixture for topping.
Press the mixture into the bottom of a greased 11" x 15" cake pan.
If you don't have a 11" x 15" cake pan, place 2/3 of it in a 9" x 13" pan and the rest in a 8" x 8" square pan.
Filling
Drain the juice from the crushed pineapple and set aside.
In a bowl, mix the can of sweetened condensed milk, crushed pineapple and a large egg.
Stir until combined.
Pour mixture over crust.
Topping
In a large bowl combine the white chocolate chips, coconut, macadamia nuts and 1/2 cup of the crust mixture.
Spoon over the filling and spread evenly.
Bake
Bake in a 350 degree pre-heated oven for 40 minutes.
Glaze
While the cookie bars are cooling make the glaze:
In a bowl, place 2 cups powdered sugar. Add 3 tablespoons of the reserved pineapple juice.
Stir well with a fork until all lumps are gone.
Drizzle over baked cookie bars.
Cut into bars and enjoy!
