'Pie-ous' Fruitbasket

This is a refreshing berry/fruit Pie arranged in a basket formed piecrust using the seasonal fresh fruits or berries.

Ingredients:

For the Cream filling:

1 Whipping cream 150gm

1 Philadelphia cheese 100g

1/2 cup sugar

1pkt Instant gelatine

1 tsp Vanilla essence

2Tbsp water

For the Pie crust:

1 1/2cup Flour

1/2 cup butter

1/4tsp salt

1/2 tsp sugar

a little water

Decoration:

fruits/berries of your choice

I used fresh strawberries, black grapes, apples, kumquats, raspberries, red ribes, Kiwis

cut out the berries/ fruits in thin slices and then with a flower shaped cookie cutter into pretty flowers, the kiwi can be used as leaves.

Getting the Dough Ready

mix up all the crust dough ingredients using a bit of water if too dry into a smooth dough. wrap it in a cling foil and set aside in the refrigerator for an hour or so.

Roll out the dough to around 1/4th of an inch. With a pizza roller cut out thin parallel strips. Using either disposable aluminium pie forms or a greased pie tin, arrange the strips on the downturned form in the form of a basket. Braid 3 strips separately to make the handle, which you should arrange in a semicircle.

Bake the pie crust at 180C till golden brown.

let it cool and then pull out the form.....Voila! your basket base is now ready!

Getting the Cream Ready

first in a small pan heat up a little water(2 Tbsp) add a pack of gelatin.Stir till all the crystals dissolve. In the mean while with a hand mixer beat the cream adding Philadelphia cream to it till smooth. Add in the sugar and the essence.

add in the Gelatine mixture and beat once again.

add this whole mixture to your pie basket and let it cool till the filling sets in.

The Fun Part:

Add some whipped cream to the border to give it a neater look.

Arrange the fruits and berries and the leaves as you would in a flower arrangement.

oh yes! Don't forget to stick in the handle.
