Pi-stachio Pie, Baked in the Air Fryer!

Hello everyone! Today we will be making a delicious Pistachio Pie... or should we say "πstachio π"? π² for short? Doesn't really sound good, but you can be certain it tastes good!

We decided to experiment and bake the pie in an air fryer, so we selected a 22cm baking tray because it's the biggest that could fit inside the basket (23cm). We also coated the entire surface of the baking tray with graseproof paper, as shown in the last picture.

Supplies

  • 300g of white flour
  • 3 eggs
  • 70g of pistachio flour (you can simply blend pistachio)
  • 180-200g of sugar
  • 120g of milk
  • 120g of butter
  • 1 teaspoon of baking powder
  • Pistachio cream
  • (Optional) chocolate chips

Melting the Butter

This instructable will show you how many things can be done in the air fryer. Let's start by melting the butter (basically we are using the air fryer as a microwave oven!).

160°C for 1 minutes will do the trick.

Mixing Liquids

Put the sugar and the eggs in a large bowl. Add just a pinch of salt and then mix everything together.

Add a bit of cold milk to the hot butter (so that it gets just warm). Slowly pour all the butter and milk into the bowl and mix.

Adding Flours

On another plate, mix together the white flour, the pistachio flour and the baking powder, then slowly combine it with the main mixture.

Spoon after spoon you should get a ticker and ticker paste.

Pouring the Mixture

Pour half of the mixture in the baking tray, then drop a few bunches of pistachio cream on it, with the help of a spoon.

Covering the Pie

The remaining mixture should be enough to cover the top part of the pie, hiding the pistachio cream inside. Use a silicon spatula to spread it.

During the first few minutes of baking, we decided to cover the pie with tinfoil. After 15 minutes at 180°C, we removed the tinfoil and baked for 25 more minutes.

Note that the air frier suggest a preset program for pies, but you should never blindly trust it! No pie is equal to another, and it's much better to open the tray and check the baking process by yourself every 10-15 minutes! For example, you can do this by poking the pie with a knife (if the knife comes out sticky/wet, the pie is not ready!)

Cooling Down

Once the baking process is finished, you can take out the pie and wait for it to cool down.

To serve the pie, we sprinked it with powdered sugar and made a few lines with some more pistachio flour.
