Pi Shaped Lemon Pie

Have you ever wondered if there is a way to combine cooking with math? Probably not. I hadn't had that idea either until I saw this contest. At that moment it was clear to me what I wanted to invent, a pi shaped pie.

1. Pick the Ingredients

This lemon pie is divided into two main pieces: the pie crust and the lemon filling.

For the pie crust we will need:

• 200 gr of flour
• 150 gr of butter
• 5 tablespoons of water
• 1 teaspoon of salt
• 1 teaspoon of sugar

For the lemon filling we will need:

• 280 gr of sugar
• 200 gr of water
• 60 gr of cornstarch
• 50 gr of butter
• 3 yolks
• 1 lemon

In this step we will mix the dry ingredients in a bowl, that is, the flour together with the sugar and salt.

After these ingredients are integrated, we will add the butter, which has already been melted, and mix again. Finally, we will incorporate the yolk into the mixture, thus forming the pie crust.

Now we will leave the pie crust resting at room temperature for about an hour.

3. Lemon Filling

While the pie crust is resting, we will cook the lemon filling. For this, again we will first mix the dry ingredients, the sugar and the cornstarch in a pot.

Then we will heat it and maintain medium heat while we add the other ingredients. Without stopping stirring, we will add the water, the butter, which will melt instantly, the yolks and the lemon juice.

We will not stop stirring until the mixture boils, at which point we will turn off the heat and let it rest at room temperature so that it cools down.

In my opinion, this is the most fun step, since we will have to design the pie's shape.

To achieve this, we must first stretch the dough with a rolling pin, until the crust's thickness is around half a centimeter.

We will then draw the pi symbol on a sheet, and its size should not exceed the streched crust's perimeter.

We will cut out the symbol and place it on top of the crust. We will cut along the edges of the figure until we get the base pi.

Now it is turn to make the pie's borders, for which we will stretch the excess dough and form long rectangles, a little thicker than the base.

We will position them around the pie's base edges, and their thickness will allow them not to fall.

It is important to make sure that the edges are well attached to the base, to avoid spillage later.

The fewer strips made, the better, since we will not have to join so many at their ends. To do so, we will moisten them so that we can mold and glue them together.

5. Bake

For this last step, we will preheat the oven to 180 ° C / 350 ° F for 15 minutes.

After time, we will put the pie's crust in the oven for 15 minutes, making sure that the edges are stable from time to time.

We will then let the crust cool for a while and once it is warm we will add the filling, which should also be already warm.

Finally, we will put the Pie in the oven for 20 more minutes.

Once the time has passed, we will remove the pie from the oven and it will be ready.

We can take it even further by eating 1 / π of the pie each time, but I wouldn't recommend it, since it is better to ration it into more servings, unless you prefer to spend all your life looking for the exact point where to cut the pie.
