So if you haven't watched Jane the Virgin it is an awesome show but one of the things I love most is how the main character Jane loves grilled cheese sandwiches. It is a common theme to share grilled cheese sandwiches when they have heartfelt moments, watching telenovelas and just for any occasion.

This is a great and easy recipe and just so comforting!! I hope that you make it. it is so warm, cheesy and gooey on the inside and crispy on the outside.

Ingredients

Now in the tv show Jane uses 3 different kinds of cheese (1/3 white cheddar, 1/3 yellow cheddar and 1/3 American cheese) we can't get some of these in Australia so I am using my favourite cheeses.

  • 2 slices of thick white bread (I'm using ciabatta)
  • Tasty cheddar cheese
  • Vintage cheddar cheese
  • Mozzarella cheese
  • Grated American and Monterey jack cheese (the closest I could get to American cheese)
  • Normal Salted butter, room temperature
  • Mayonnaise (I use kewpie mayo but any type will work)
  • **Additional for an extra kick add some dijon mustard to really bring out the cheesy-savoury flavour**

Equipment

  • Chopping board
  • Knife
  • Butter knife
  • Frying pan
  • Spatula

For the bread, you can use any type that you wish. I highly recommend buying your own loaf of ciabatta and cutting it nice and thick as I have. the cheese and flavour make it irresistibly soft on the inside, yet the butter and mayo give it a beautiful crunch on the outside.

For the cheese, you can add as much or as little as you want. I cut mine into a few mm thickness and layer it up.

Prepare the Bread

To give the perfect buttery and crispy toast it is important to use a mixture of salted butter and mayonnaise.

Take a couple of teaspoons of butter and spread evenly on one side of the bread. then take a couple of teaspoons of mayonnaise and spread this on top of the butter. Then flip the bread over so that the 'plain' side of the bread is facing up.

Add the Cheese

On the plain side of the bread place all of your cheese **if you are going to add mustard add it before the cheese**. Now of course you can add as much and any cheese that you want. (I do not judge how cheesy you are). I added my cheese in the order of tasty cheddar, mozzarella, mixed American and Monterey Jack cheese, then vintage cheddar. Then place the other slice of bread on top, the butter and mayonnaise facing outwards.

Grill the Sandwich

To grill the sandwich heat a frying pan on medium-low heat and place the sandwich in the pan. If you have any extra butter you can melt it before adding the sandwich (as I have done). Then fry the sandwich for about 3-5 minutes then flip and cook until the cheese has fully melted and it is golden brown, then cut in half

Cut the Sandwich and Serve

Take the sandwich off the heat and cut it in half. as you can see it looks absolutely cheesy and gooey! I hope that you try it and eat it while you watch Jane the Virgin or any of your favourite shows. It is such a lovely comfort food and is an absolute favourite of mine.
