Peppermint Hot Chocolate

This is a simple recipe for making peppermint hot chocolate squares, which can either be eaten on their own as fudge, or mixed in a cup of hot milk for ready-to-go delicious hot chocolate. What I love about these is that I can make quality hot chocolate for one without breaking out a pan and mixing a fresh batch every time. I used a recipe from this blog as a base, and added peppermint flavoring and crumbled candy canes for flavor. This recipe makes around 3 dozen squares.

Ingredients:
½ cup heavy cream
14-ounce can sweetened condensed milk (1 1/4 cups)
3 cups semisweet chocolate (I used the better part of an 18 oz bag of chocolate morsels)
1 cup unsweetened baking chocolate (one 4oz bar was enough)
1 tbs peppermint oil
candy canes (to crumble on top, and use as a stir if you're feeling fancy)

Mix cream and condensed milk in a pot on low heat, and once hot turn off the burner. Add chocolate, and let it sit for a few minutes to melt. Return to low heat, and stir until smooth and glossy. Add peppermint flavor, or any other flavor of your choosing.

Pour your chocolate into a square 8x8 pan lined in wax paper. Crumble candy canes and sprinkle on top. I crumbled mine pretty small with a mallet and cloth so that they would dissolve easily into the hot chocolate. Put in the fridge to cool for at least 12 hours. When firm, cut into 1 1/4" squares, and you're ready to go!
