Peppermint Chex Mix is one of my all-time favorite holiday treats! It's super easy to make {only 3 ingredients!} and I haven't been able to keep my hand out of the bowl for longer than a few minutes. Dinner shminner...

Instead of using the small candy canes I bought a giant candy cane for .79. I used 1/3 cup and have about 1/4 cup leftover. I also used white chocolate bark in place of the white chocolate chips, only because that's what I had on hand.

6 cups Rice Chex® or Chocolate Chex® cereal
1 bag (12 oz) white vanilla baking chips (2 cups)
1/3 cup coarsely crushed peppermint candy canes (14 miniature, unwrapped)

I used a small food chopper to crush my peppermint candy. You can put it in a ziplock and use a mallet, but be sure to crush it up quite a bit! 

Toss the Chocolate in the Microwave...

1. Line cookie sheet with foil or waxed paper. {I just put wax paper on the counter top.} Place cereal in large bowl.

2. In microwavable bowl, microwave white vanilla baking chips uncovered on high about 1 minute 30 seconds, stirring first after 1 minute, then every 30 seconds after that, until chips can be stirred smooth. GO SLOWLY. White chocolate siezes from too much heat, so resist the urge to heat it longer! If your chocolate has started to sieze a bit, you can add in 1 TBSP of shortening or vegetable oil and stir until it's smooth. 

Stir in half the crushed peppermint candy.

Toss to Coat- DONE

3. Pour over cereal; toss to evenly coat. Spread mixture in single layer on cookie sheet. Immediately sprinkle with remaining candy. Let stand until set, about 20 minutes. Gently break up coated cereal. Store in airtight container.
