Peppermint Almond Bark

I kicked off the holiday cooking season this year with a family favorite of mine, peppermint almond bark!  It uses vanilla almond bark and crushed candy canes, and simply melts in your mouth!  This peppermint almond bark is just ahhhmazing

One of my favorite things about this holiday recipe is the fact that it is so dang simple! 

All you need are two ingredients
Vanilla (or White Chocolate!) flavored Almond Bark
and
Peppermint Candies (or candy canes for the holiday spirit!)

Smoosh the Almond Bark!!!

First things first, you're going to want to bust up your almond bark into little squares.  If you want, you can chop it up finely using a sharp knife (It will melt much faster) but I was  lazy this year.

After you've busted up your almond bark into meltable portions, you'll want to start some water simmering in a sauce pan on the stove. 

Make sure that you have a stainless steel bowl or other saucepan that can fit on top!
If you have a double boiler, all the more power to you, but I do not.

Once your bowl is hot, add in your almond bark and melt it just as you would chocolate.  Stir occasionally!
Almond bark is kinda like chocolate in that it looks solid until you stir it, then it becomes a big dollop of meltyness!

Smoosh the Candies!!!

While your almond bark is melting on the stove (yeah, I know that can take a while) you're going to want to smash up your peppermint candies / candy canes.

You can use a rubber mallet, a hammer, or a good old fashioned rolling pin.  What matters is that you get out all of your holiday stress by smashing those little sugarbombs to smithereens!

Once ALL of your almond bark is melted, and ALL of your candies are smooshed, remove the almond bark from heat and stir the candies into the mixture.  Be very careful not to let any water get into there, or it will give your almond bark a grainy taste.

Lay It Flat

Line a cookie sheet with aluminum foil.  This REALLY helps taking the candy off of the pan later in the game.    Plop down all of your candy/bark melty mixture onto the sheet and spread it around into a thin-ish layer.

Let cool at room temperature until completely solid (1-2 hours).

Break sheet of solid almond bark into bite-sized chunks, and enjoy!

These candies are great for sharing with family, neighbors, coworkers, and especially enjoying around the house.  I like to keep little goodie-bags of it around to send home with unexpected visitors!
