Pepper Crusted Tri-Tip

This is one of the tastiest cuts of beef I have ever had. Properly prepared, it's tender, juicy and unforgettable. There is a very similar dish to this served by Hofbrau and Saltgrass. However, while you will pay over 20 dollar for 12 oz. of this at a restaurant, if you follow this instructable, you'll end up paying 10-15 dollar for over 2 pounds!

Ingredients.

2 Tsp. Salt

2 Tbsp. Black Pepper

1/2 tsp. Onion Powder

1/2 tsp. Garlic Powder

2.5 lbs Tri-Tip Roast


Prep.

I like to use whole pepper corns and sea salt. I combine all the spices in a mixer to get finer particles.

Liberally coat your roast in salt and pepper.

At this point, you can either choose to smoke it or bake it.

Today, I chose baking. 


Bake It.

Set the temperature of your oven to 220 degrees F. Bake for 3 hours, or until the internal temperature reached 160 degrees F.

Remove from oven and allow to rest for 15 - 30 minutes before cutting.
