"Pelmeni" From Scratch
With my mom coming from Russia I've been forced to try many Russian cuisines, some enjoyable, and some less enjoyable. Over the years I've developed a relationship with the Russian dish "Pelmeni" as my comfort food. You can always buy a bag from a local Eurasian store, or you can make them from scratch like my mother and grandmother sometimes do. This provides the added benefit of experiencing the process another culture of people go through, and to possibly help deepen connection to your own Eurasian culture.
We will be:
- Taking a meat of choice
- Wrapping this meat in a dough
- Then cooking this product to turn meat and dough into "Pelmeni"
In this instructable I will be sharing my family recipe on how to make "Pelmeni" from scratch with either pork, beef, chicken, or a mix of any of the three.
Supplies
Ingredients
- 1/2 cup of Flour
- Dough
- 2 lb Meat(Pork, Beef, Chicken)
- 1 diced Onion
- Pot of Water
- Pinch of Salt
Tools
- Cutting Board
- Meat Grinder
- Knife
- Rolling Pin
- Pot
- Plate
Preparing Dough
Spread flower on the cutting board, then roll the dough so that it is about 1.5 inches in diameter.
Cut and Shape Dough
Cut the dough roll into 1 inch pieces.
Next flatten and shape these pieces with a rolling pin till they are thin and round.
Dice an Onion
Cut and dice an onion into small pieces.
Prepare and Grind Meat
Starting with your meat of choice, place it in a meat grinder and process it.
Mix Onion With Meat
Mix the onion into the meat using your hands.
Then place into grinder again, and process again.
Roll Meat and Place on Dough
Roll the meat into about 1 inch balls.
Next place these balls onto the thin round sheets of dough.
Then twist the dough around the meat balls.
Boil "Pelmeni"
Fill a pot with water and a pinch of salt, then set it to boil.
Once the water is boiling place the "Pelmeni" in, and turn the heat down to Medium-High.
Boil the "Pelmeni" till they float, then boil for an additional 3-4 minutes.
Enjoy!
The "Pelmeni" are now done. You can now add whatever toppings you'd like such as: herbs, butter, or some sour cream!
