Pecan-apricot Cake

This is an easy cake to make in which you can vary what kind of dried fruit or nuts you want to use.

Ingredients & Materials

Ingredients:

80 g(grams) unsalted butter

250 g sugar

2 eggs

190 g flour

1 3/4 teaspoon baking powder

pinch of salt

40 g chopped pecans (or a different nut)

180 g chopped dried apricots (or another dried fruit)

1,7 dl (deciliter) milk

butter for greasing and non stick paper

materials:

mixing bowl and some extra bowls

mixer

22 cm cake spring form pan

an oven (obviously)

I usually grease the spring form first and than add nonstick paper. This will make the cake come out perfectly without sticking to the sides.

Adding Ingredients

Start by preheating your oven to 180 C (celcius)

Add the butter and sugar to the mixer and mix together.

Beat your eggs before you add them to the mixer.

Mix untill you get a pale creamy substance

Add the Rest

Add the remaining ingredients to the mixer.

mix for 1 minute on the lowest speed untill everything is blended.

The Baking

Add the mixture to the cake pan and spread evenly.

Bake the cake at 180 C for an hour.

Check if the cake is done by sticking a cake tester( or bbq stick) in the middle of the cake, if it comes out clean the cake is done. (otherwise put back in for 5 more minutes and check again)

Let the cake cool in the pan for 10 minutes

Remove from pan and let it cool further.
