Peanut Pie

In this instructable, I will show you how to make a Peanut Pie.
It's quite a few steps, but totally worth it!
Ingredients

For the crust you will need:
1 1/4 c all purpose flour
1/4 c dry roasted peanuts
2 tsp light brown sugar
1/4 tsp salt
5 tbsp cold butter
2 tbsp creamy peanut butter
1 tbsp cold shortening
4-6 tbsp of water
For the filling you will need:
1 1/4 c packed light brown sugar
1 tbsp all purpose flour
1/4 tsp salt
1/2 c butter, melted
3 eggs
1/3 c half & half
1/3 c dark corn syrup
1/2 tsp vanilla extract
1/2 c creamy peanut butter
1 1/2 c dry roasted peanuts

To make the crust:
Using a food processor, combine the flour, peanuts, brown sugar and salt until the peanuts are ground.

Add the butter, peanut butter and shortening and pulse until the mixture is crumbly in texture.

Add four tablespoons of cold water, then pulse 4 times.
Add another tablespoon of cold water and pulse a few times until it's well blended.
Add another tablespoon of cold water and pulse again until it's well blended..by now, your dough should have formed like in the last picture, but if not, keep adding a tablespoon of water at a time and blending completely.
And....almost Time for a Break.

Shape the dough into a patty shape, wrap with plastic wrap and place in the refrigerator for at least a couple of hours, or like me and do it overnight.

Place the dough on a floured surface, lightly flour the top of the dough, cover with parchment paper and roll it out..
It will be pretty stiff, but eventually, you will get it flattened out.

Place the dough into a pie plate, press down, trim the edges, fold the edges under and flute the edges. To flute, just press your right thumb between the left thumb and left index finger.

To make the filling stir together the brown sugar, flour and salt.
Mmmmm....butter.

Stir in the melted butter.

Beat the eggs in a separate bowl, then stir them into the other ingredients.

Add in the milk, dark corn syrup and vanilla.

Now stir in the peanut butter.
Getting Ready to BAKE

Pour the filling into the crust, cover the entire top with peanuts and to keep the edges from burning, wrap with aluminum foil or a pie cover.
Bake

Bake in an oven that's been preheated to 375° for 10 minutes, then lower the temperature to 350° and cook for 45 additional minutes.
Cool It, Buddy!

Cool on a wire rack for a couple of hours.
