Peanut Butter Potato Candy

This candy is not for everyone! I come from a family of Irish settlers and this is a recipe we make for get togethers. You must like peanut butter and have a tooth for the sweeter ( sweetest ever! ) things in life! Your teeth, and stomach may hurt after consuming so much sugar but we love it and wanted to share.

Ingredients/utensils

Only three ingredients: a small potato, powdered sugar and peanut butter. Utensils: fork, rolling pen, wax paper, small bowl, microwave, spoon, plate, butter knife, 1/3 measuring cup, oven mitt/pot holder.

Potato Prep

Quick bake your potato in the microwave. Scrub your potato and with your fork poke lots of holes and drop in a microwave safe bowl. I cook mine for 5 minutes in a convection microwave. Using a pot holder or kitchen towel remove potato and smash contents into the bowl while removing the skin. The potatoes skin will come right off if it's done baking. Use your fork to mash up the potato.

While your potato cools a bit, pour 1/3 cup powdered sugar onto your wax paper. Make a small well in the powdered sugar and pour in potato. Add powdered sugar while mixing in potato with your fork until a potato dough forms. This may take a surprising amount of powdered sugar. Yes, you will be a diabetic after you eat this. And you will get cavities.

Sprinkle dough with (cough) more powdered sugar and roll out with a rolling pen. Next, so spread on the love! Crunchy or smooth will work, I prefer smooth. Spread a medium to thin coat of peanut butter over the dough.

Roll It/slice It/enjoy!

Using your wax paper, lift and roll to create a peanut butter/potato log. Sprinkle the roll with (cough) more powdered sugar and slice it into 1/4 inch pieces. Place on serving dish ( I'm fancy so I use a plate ) and enjoy! Share with your friends and family. One piece goes a long way!

Add Ins/personal Preferences

We've done variations with different crunchy and smooth peanut butters and dipping the completed pieces in chocolate. Personally I like smooth peanut butter and no extra chocolate. The original, as is, is plenty sweet for me but you may like other options. I have other family members who have experimented with heath bar pieces in the mix as well and swear by it. The candy will keep for about 48 hours in a tupperware container at room temperature. Have fun experiencing my families potato candy for yourself, just don't say I didn't warn you!
