Peanut Brownie Meringue Cookies

After making something with an egg yolk in it you may often wonder what you to do with just a single egg white. A cookie like meringue, tasting like the classic brownie, these came up as a great treat.

Ingredients

For these cookies you will need:

  • 1 egg white
  • 40 grams (1.5 oz) of sugar
  • pinch of salt
  • 1/2 cup of finely chopped peanuts (or other nut)
  • 1 tablespoon of cocoa powder

To make these cookies start by whipping up the egg white until it is almost stiff. Add the sugar and salt then mix well.

Nut's and Cocoa

Tip in the nuts, then add the cocoa and mix well. We sieved our cocoa, otherwise you run the risk of having dry pockets of unmixed in cocoa powder in the finished cookie. Not good.

Cook the Cookies

Use a small spoon to scoop out a cookie sized portion of mixture, about 3 cm across, then carefully place it onto the tray. Cook these in a 150 C (300 F) oven for 10 minutes, then turn your oven down to 120 C (250 F) and cook for 30-40 minutes.

With a dollop of cream and a sprinkle of nuts these cookie meringue's turned out great. "Can I have another one?", were the resounding comments.
