Patriotic Parfait

I really like this Patriotic Parfait because it is a nice summer treat that can be made in under 15 minutes and is a fun twist on piña coladas and parfaits. It is a lite treat that isn't too sugary and can serve as afternoon drink on the porch or can be a desert too. Also it is a nice reminder of patriotism and that we need to come back together to be more united as a country. This recipe came from my family's tradition of getting together at the 4th of July that started 4 generations ago, and this was made one year to celebrate. Another reason it is special to me is because the jam drizzled on top is my great grandma's jam recipe. I love the taste of the sweet fruitiness it brings out along with the creaminess of the piña colada. I hope you enjoy this treat as much as I do!

(recipe serves 2, time to make: under 15 minutes)

Get Together Your Tools & Ingredients

Tools Needed:

• Blender

• Strainer(for washing blueberries)

• Measuring Tools

• Scale

• Tall Glasses

Ingredients Needed:

• 1/3 Cup Blueberries Per Glass(more or less depending on how thick of layer you want)

• 10 oz. Frozen Pineapple Chunks

• 2 Scoops of Vanilla Ice Cream(About 1 Cup)

• 1 Cup Coconut Milk

• 1/2 Cup Pineapple Juice

• A Drizzle of Homemade Strawberry Jam or Jam of your choice(store bought works too)

Tip: Put the syrupy part of jam on right before serving or else it will start to sink and you'll lose the red layer.

Also, you can garnish with other fruit and toppings but they might sink, I put a raspberry on the rim of the glass and tried a cherry on top but it sank.

Wash Blueberries for 1st Layer

The first step to make a Patriotic Parfait after gathering ingredients and tools is to wash about 2/3 of a cup of blueberries in a strainer. These blueberries will be our blue, bottom layer.

Make Piña Colada Mixture for 2nd Layer

For the next layer your going to make a piña colada mixture, since I'm not 21 I made a virgin piña colada(instructions below). To be honest this is my first time making this mixture and it is by far my favorite. Now if you have your own go to piña colada mixture that works too. Below I'm going to tell you how I made my piña colada mixture.

How to make Virgin Piña Colada:

Step 1: Put 10 oz. Pineapple, 1 Cup Vanilla Ice Cream, 1 Cup Coconut Milk, and 1/2 Cup Pineapple juice into a blender.

Step 2: Blend until it is the right texture and consistency that you like.

Step 3: Now it is ready to serve.

(Makes: 2 Patriotic Parfait amounts, or by itself it makes 2 small glasses or 1 big glass.)

Choose a Jam/Jelly of Your Choice for the 3rd Layer

For the final layer in a Patriotic Parfait you are going to need a jam or jelly. I prefer homemade but either homemade or store-bought works. The more red it is the more you get the red white and blue point to come across, so I would highly recommend strawberry or raspberry jam/jelly. I used my great grandma's strawberry jam recipe for this, which is my favorite.

Layer Together Everything and Garnish If Desired

The final step in making a Patriotic Parfait is to do the layering. First layer blueberries about and 1-2 inches tall in the bottom of a tall glass to create a blue layer. Next, pour half of your piña colada mixture on top of the blueberries to create your white layer. The final step is to drizzle the syrupy part of jam or jelly on top of the piña colada mixture for the red layer. If you want you can garnish now, however just nothing too heavy or it will sink. Now you are done making a Patriotic Parfait, hope you enjoy!
