Patacón (Dominican Plantain Sandwich)

A Patacón is a Dominican style sandwich made from two fried plantains topped with all of your favorite sandwich toppings!! You can enjoy a piece of the Dominican Republic in the comfort of your own home. In this one I chose to use the most common vegetables from the DR, along with chicken. Feel free to be creative and add whatever you would like to make it your own, such as BBQ pulled pork, cheese steak or maybe Peanut butter and Jelly!

Makes Two Patacón Sandwiches

Supplies

  • Large pan or pot for frying
  • Frypan
  • Zip-lock bag for marinade
  • 2 Cutting boards
  • 1 Kitchen knife
  • 1 Pair of Tongs

Ingredients for patacón

  • 2 Cups Vegetable Oil for frying
  • 4 Green Plantains
  • 1 Tablespoon Vegetable Oil
  • 2 Chicken breasts
  • 1 Tomato
  • 1 Red Onion
  • 1 Avocado
  • Mustard
  • Mayonnaise

Marinade for chicken

  • 1 Juiced Lime
  • 4 Tablespoons soy sauce
  • 2 Cloves garlic, (minced)
  • Salt and pepper to taste
  • Pinch Crushed Red Pepper Flakes (Optional)

Fillet Chicken

Take two chicken breasts and cut them in half to have 4 butterfly chicken fillets.

Marinading the Chicken

Start Marinading the chicken

In a zip-lock bag or bowl mix the following and allow chicken to marinate for 30 minutes or up to 3 hours.

  • 1 Juiced lime
  • 4 Tablespoons soy sauce
  • 2 Cloves garlic, (minced)
  • Salt and pepper to taste
  • Pinch Crushed Red Pepper Flakes (Optional)

Peel Plantains

Take the plantains and cut the ends off about 1 inch into the plantain.

Take the plantain and cut or peel off to reveal the raw plantain inside. More information in pictures.

  • Plantains are pretty tough so dont worry that your are going to ruin the plantain.

Fry Plantains

  • In a saucepan add 2 cups oil and heat up.
  • In hot oil, fry whole plantain for about 2 minutes on each side.
  • Take plantain out of oil and let rest for 1 minute.

Press/Smash Plantain

Take plantain and on the cuttingboard press/smash plantain with second cutting board until about 1/4 inch thick.

  • Plantains are pretty tough so dont be afraid to put some muscle into it :)

Fry Again

Take the pressed plantain and fry again in the oil (about 1.5 - 2 minutes each side)

  • Once crispy and golden brown take them out and let them cool.
  • Repeat process for all four plantains.

Cooking the Chicken

In another frypan drizzle 1 Tablespoon of vegetable oil and bring to heat.

Cook chicken fillets until not pink in the middle (about 1.5 - 2 minutes each side)

Slice Produce

Cut avocado, tomato and red onion into thin slices.

Assembly

Take two fried plantains and spread mayonnaise and mustard to one side.

Add avocado, tomato, onion and two of the chicken fillets on top of the plantain.

Take other two fried plantains and place on top.
