a crunchy shell of parmesan cheese filled with olives - doesn't that sound delicious?
- it certainly is!
Spoil your guests with this impressive, but easy to make fingerfood.
comes great with a glass of red wine or just as a snack for itself.
Only a few ingredients, about 30 minutes of your time
and your taste buds will be thrilled! - that's a promise!
Ingredients

just a few ingredients:
24 big olives - if you only can find small ones, you'll need about 30 to 35, all olives are great: black, green, stuffed ones, marinated - whatever you prefer.
80g (2,82oz ) parmesan, freshly grated, other hard cheese will also do
1 tsp chilipowder
2 tbsp soft butter
90g (3,17oz) all purpose flour
2 tbsp cold water

combine parmesan, soft butter and chili powder - if you are sensitive to spicy food, start with 1/2 tsp and try the dough later.
use a spoon or fork and some pressure, until everything is well blended.
Kneading

knead in flour and water
until the dough feels smooth
if its crumbly, add a little more water.
form an even roll of the parmesan dough.
Cutting
![P1240290.JPG](/proxy/?url=https://content.instructables.com/F2M/YC7O/KNRGTAU8/F2MYC7OKNRGTAU8.jpg&filename=P1240290.JPG)
![P1240292.JPG](/proxy/?url=https://content.instructables.com/FSF/PH5X/KNRGTAUK/FSFPH5XKNRGTAUK.jpg&filename=P1240292.JPG)
![P1240293.JPG](/proxy/?url=https://content.instructables.com/FWA/B5DR/KNRGTB4J/FWAB5DRKNRGTB4J.jpg&filename=P1240293.JPG)

cut the parmesan roll into 24 equal sized parts ( that's for big olives, if you have smaller ones, you want to cut 30 to 35 pieces)
to do so:
- cut the roll first in half ( 2 pieces)
- cut the halves in half ( 4 pieces)
- once more in half ( 8 pieces)
- cut every piece in 3 parts
Cover the Olives

flatten one dough piece, with your fingers
place one olive in it and form the dough around it lika a blanket
close the ends with a little pressure - moisten your finger with a dab of water if it won't close.
proceed until all olives are covered.
Baking

place the olives on a baking tray covered with baking paper.
bake about 15 to 20 minutes at 200°C (393°F )
until the parmesan shell is golden brown.
Let cool on the baking tray
It is rewarding to wait until the next day before eating - if you are not that patient, wait at least until the olives are cooled down to room temperature - even if it's very tempting to try the olives right away :)
Enjoy!
