I like to bake and take great pride in making something different that you don’t see every day Papaya Bread is great for desert while entertaining family and friends or just every day treats.

Papaya is a fruit I have never cooked with before so this entire recipe is my own creation. My wife and oldest son are diabetic so when bake I make diabetic safe dishes.

This no sugar added papaya bread recipe makes 4 3 1/2 x 8 x 2 1/4 inch loaf pans (10 x 20 x 5 1/2 cm). I like to use disposable aluminum pans with clear lids for freezing and gifting.

If you have the Papaya puree made a head of time this sweet bread can be ready in one hour.

Ingredients

Start by gathering the ingredients together.

1 ripe papaya, or 1 1/2 cups Papaya puree.

4 eggs

1 cup vegetable oil

2/3 cup water

1 teaspoon vanilla

3 1/2 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon baking powder

1 1/2 teaspoons salt

3 cups Splenda or some other artificial sweetener, if you are not concerned about sugar content you can use white sugar.

If you do not have papaya puree it is simple to make.

Cut the papaya in half scrape out the guts and seeds.

Peel the papaya and dice it into one inch cubes, discard any bad pieces and place the good parts into a pot and add a little water.

Put the pot on the stove on high until it begins to simmer then turn the heat down.

The papaya is cooked when the cubes are soft and easy to mash, once cooked take the pot off the heat and let stand until cool.

Puree the papaya when it is cool, now you are ready to bake or freeze for later.

Grease four 3 1/2 x 8 x 2 1/4 inch (10 x 20 x 5 1/2 cm) loaf pans with olive oil.

These aluminum pans are ideal for gifting; prepare the pans by coating the pans with olive oil using a brush, I find the bread falls out of the pans with ease when you coat them this way.

Preheat oven to 350 degrees F 175 degrees C.

In a large bowl, mix together papaya puree, eggs, oil, water, vanilla and Splenda or sugar until well blended.

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

Stir the dry ingredients into the papaya mixture until just blended.

Pour the batter into the prepared pans; this batch should fill 4 pans to about 3/4 full, and check the oven to be sure it is up to heat.

I like to place the pans on a cookie sheet and all four on the middle rack of the oven.

Bake for about 45 to 50 minutes in the preheated oven. Loaves are done when you can insert a toothpick in the center of the loaf and it comes out clean.

Once baked let the loves cool on a rack, when the loves are cool you can put the clear plastic covers on the pans or you can glaze the loves and serve.
