Paneer Corn Masala
Paneer corn masala is another new variation of Paneer Curry. Corn in combination with paneer, tomatoes and freshly added spices makes it very delicious.
This curry can be served with Butter Naan or Roti.
Supplies
Ingredients :
- 2 Cloves
- Small inch cinnamon
- 2 Cardamom
- Small inch Bay leaf
- 2 Chopped onions
- 5 Small chopped tomatoes
- Half cup boiled sweet corn
- 8 to 9 Cashews
- 2 dried Red chillies
- Teaspoon ginger garlic paste
- Half teaspoon Cumin seeds
- 150 g chopped paneer cubes
- Half teaspoon Red chilli powder
- Teaspoon Garam masala powder
- Teaspoon Coriander powder
- Pinch of turmeric powder
- Salt as per taste
- Cooking oil
- Coriander leaves for garnishing
- Grated cheese or Paneer

First Step
Take little butter or melted ghee in a vessel.
When ghee is heated add 2 cloves and a small inch of cinnamon.
Add Cardamom and Bay Leaf
Next add 2 cardamom and small inch of bay leaf. Saute all spices for few seconds.
Add Onions and Tomatoes
Add 2 chopped onions and 5 chopped small tomatoes.
Add Dried Red Chillies and Cashews
Add Two dried red chillies.
Cover with lid and cook for sometime.
Add about 8 to 9 cashews.
Transfer to Blender
Cool the mixture and transfer to blender.
Blend to fine puree.
Curry Preparation
Take little butter or ghee in a vessel. When it is heated add half teaspoon cumin seeds and teaspoon ginger garlic paste.
Add the Blended Puree
Add the blended puree and give a mix.
Add Spices
Next add pinch of turmeric powder, teaspoon coriander powder and teaspoon garam masala powder and give a mix.
Add Salt and Red Chilli Powder
Add salt as per your taste and about half teaspoon Red chilli powder.
Add Boiled Sweet Corn
Add about half cup of boiled sweet corn and give a mix .
Add Dried Fenugreek Leaves
Add teaspoon dried fenugreek leaves (kasoori methi) which gives nice flavour to the dish.
Add Paneer Cubes
Add chopped paneer cubes and give a mix. I have taken about 150 g paneer.
Add Little Water
If the curry consistency is very thick add little water and give a mix.
Add Milk
Add about one tablespoon milk. If fresh cream is available we can even add it.
Garnish With Coriander and Grated Cheese
Finally garnish with chopped coriander leaves and some grated cheese or you can top with grated paneer.
