480g Plain Flour

75g Caster Sugar

1tsp Salt

2 Large Eggs + 1 Egg Yolk

7g Fast Action Dried Yeast

56g Unsalted Butter

120ml Milk

3tbsp Water

2tsp Vanilla Bean Paste

Melt the butter with the milk, water and vanilla and then leave to cool. In a stand mixer or bowl, mix together the flour, sugar, salt and yeast. Next, make a well in the dry ingredients and add the eggs and the cooled melted butter mixture. Mix the ingredients together until a dough forms. Once a dough has formed, knead for 8-10 minutes. (You can do this with a dough hook attachment or by hand). Once the dough is smooth and elastic, place in an oiled bowl and cover with cling film. Leave to rise for 2 hours. Once risen, Roll out the dough on a floured surface and use a cookie cutter to cut out the doughnuts. Place the doughnuts on pieces of greaseproof paper to rise again for another 30 minutes. Once risen, fry the doughnuts at 180 degrees C for 1 minutes and 20 seconds (40 seconds on each side). Place the doughnuts on paper towels to remove any excess oil.

Icing Sugar

Milk

Vanilla Extract

Food Colouring

Mix together icing sugar, milk and vanilla extract to form a thick icing. Seperate the icing into separate bowls and add food colouring to each bowl. You'll need yellow, blue, green, orange, red, pink, black and dark green. Dip the doughnuts into the icing and leave to dry on a wired rack. Once dry pie or use a toothpick to draw on the Pokémon faces.
