PI-sized PIece of Greek Honey PIe

Selected to honor Archimedes on Pi Day, melópita (which contains the letter Pi when written in Greek) is a Greek honey pie. Though Archimedes was actually from Sicily, cheese-based pies are common there too.

To increase the Pi factor of this 10 inch pie, it will be cut into 25 pieces. This will result in each slice having an area of Pi square inches.

Gather Your Ingredients - Crust

1 3/4 cup of flour
2 tablespoons of sugar
1/2 cup of frozen butter
2 tablespoons of vodka
2 tablespoons of ice-cold water

Preparing the Crust

Pulse flour, sugar and butter in a food processor until it resembles coarse sand.

Drizzle water and vodka into mixture until it pulls together.

Roll dough into a ball. Wrap it in plastic wrap. Flatten it into a disc. Refrigerate for at least 30 minutes.

Gather Your Ingredients - Filling

4 eggs
1/4 cup of sugar
1 tablespoon of flour
1/2 cup of honey
1/4 teaspoon of cinnamon
1 pound of mizithra or ricotta

Preparing the Filling

Whip the eggs and sugar on high for 5 minutes.

Add the flour and honey. Whip for 1 minute.

Add the cinnamon. Whip for 1 minute.

Add the mizithra or ricotta. Whip for one minute.

Assembly

Preheat oven to 350 degrees.

Roll out the dough to 1/8 inch thick.

Place in 10 inch pie dish and prick with a fork.

Pour filling into crust.

Bake for 50 to 60 minutes.

Remove the pie from the oven.

Sprinkle with another 1/4 teaspoon of cinnamon.

Allow to cool.

Slice pie into 25 equal pieces.

Serve.
