Medium hard boiled eggs take 8 minutes. Firm take up to 30 minutes. The secret disclosed here is getting the shell off without tearing up the egg.

Put enough water in pan to cover egg. Bring it to a rolling boil. Boil for 8 minutes or more, depending on how firm you want the yoke.

I removed the egg with tongs after 8 minutes. I placed it in a jar with about a cup of cold water & shook it vigerosly, breaking up the shell. The membrane under the shell holds all the pieces together. It can then easily be peeled off.

Shake. Shake. Shake

Shaking Hard Boiled Egg #2

Shake the jar, egg and water for about 30 seconds to break up the shell.

After shaking in the jar of water, the egg's shell is broken into hundreds of small pieces and held on to the thin rubbery membrane covering the hard boiled egg white. Simply peel off the membrane and the shell comes off with it. Run cold water over egg and your hands will help keep you from burning your hands.
