Overripe Bananas to Delectable Banana Bread

Supplies

- 3 bananas (brown/overripe)
- 1 stick butter
- 1 cup unsweetened yogurt (or sour cream)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all purpose flour
- 1 cup granulated sugar
- 1/2 brown or light brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- Three mixing bowls
- Loaf pan
- Mixing utensils
Optional step
1 cup of semi-sweet chocolate chips or as desired
Mash Three Bananas
In a large mixing bowl mash together three bananas in a small mixing bowl using desired kitchen utensil. Browned bananas are ideal because they will provide the most flavor. Potato mashers are recommended as they are very efficient. Do not over mash the bananas, chunks are more than okay.
Mix Wet Ingredients
In another mixing bowl bowl, mix together 1 stick of melted butter and 1 cup of yogurt, 1 teaspoon vanilla extract, and two beaten eggs.
Whisk Together Dry Ingredients
In a third bowl whisk together all dry ingredients, 1 cup of flour, 1 cup of sugar, 1/2 brown sugar, 1/2 teaspoon of salt, and 1 teaspoon baking soda.
Combine Wet & Dry Ingredients
First whisk together all wet ingredients into the large bowl with bananas, then gradually fold in in dry ingredients with a spatula. Be sure not to over mix when doing this.
Optional Step
For an additional burst of flavor, fold in 1 cup of semi-sweet chocolate chips, or as desired.
Bake
Pour the batter into a prepped bread pan and bake for 50-60 minutes at 350 degrees. Let it cool for 30 minutes. Slice and enjoy this bundle of yumminess.
