Our Spaghetti
Added to the plate was a simple salad with a dressing of apple vinegar, a bit of mustard, and oil to make an emulsion. Also added to the plate was some homemade bread. Use whatever you prefer.The glass contains some homemade wine, but you can use whatever beverage you prefer.

Ingredients:
3 cups all-purpose Flour (semolina is hard to get where I am).
4 fresh large to extra large eggs at room temperature. (cold eggs are harder to work with.)
2 tsp oil
1 tbl water
1 tsp salt
1 can peas
Sauce, cheese, and meat (see https://www.instructables.com/id/Our-pizza/)
Optional: Parmesan Cheese
Tools:
Large bowl.
Heavy spoon
Measuring cup.
Pasta spoon.
Large pot for boiling spaghetti.
Colander for draining water.
Pan to reheat meat, cheese and sauce.

Pasta Dough 1:
Take all the ingredients for the spaghetti and put them in the mixing bowl.
Then crack the eggs into that mixture. (throw away shells)
Take you spoon and gently crack the yolks if needed.
Gently start to stir the mixture so flour does not go flying.
As the mixture starts to meld, you can mix more firmly till everything is completely incorporated.
Put the bowl in the fridge to let it rest for say 30 minutes or so.
Pasta Dough 2:

Take the dough and split into parts that will go into the pasta machine.
Set the pasta machine to the lowest or widest setting.
Make sure each dough part is not sticky. you may have to pat it with flour until they are not.
Feed a part of the dough in the machine and crank it till that part goes all the way through.
If it binds then the part is too big.
Go up a notch on the setting of the pasta machine and re-feed the dough part till the dough is the thickness of spaghetti. Re-flour if necessary if dough becomes sticky.
Let the dough lengths rest for a bit.
Start water to boiling.
Hint: At this point you could use the spread out dough for lasagna.
Anyway, now feed the spread out dough into the spaghetti cutter and the strands will come out. Hopefully you have a large enough pot to hold all the noodles.
Set aside in a pile till the water is boiling. Adding oil and or salt to the water is up to you. I do add salt.
Put the pasta strands in the boiling water but do not over crowd them. In fact spread them out a bit if you can with a spaghetti spoon.
In about two minutes or so the spaghetti should be cooked. It will rise to the top.
Reserve a bit of the water for the sauce. with coffee cup. Be careful as the water is hot!!!!
Put the colander in the sink.
with towels to hold the pot, pour the water and spaghetti into the colander to drain the water and catch the spaghetti into the colander. Be careful again as the water is still scorching hot.
Let sit for a minute to prep the sauce, cheese, and meat.

Add the reserved pasta water.
Add the spaghetti and mix completely.
Let cook for a few minutes.
Serve.
Add Parmesan cheese if you like
