Organic Waffles
Ever since I was a little kid my mom gave us anything we wanted for breakfast from sugary cereals to over-the-top french toast. As I grew older I was a little more conscious about what I ate, but still, breakfast was my favorite meal of the day and fruit wasn't going to cut it. I began researching and found recipes for healthier pancakes, granola, omelets, but couldn't find a good delicious waffle recipe.
In the end, I decided my waffles should have: Low sugar, fat, gluten and calories natural and organic ingredients. A good balance of nutrients to be a fulfilling breakfast it took a lot of research, trials, errors, and taste tests, but in the end, I surely believe these are the best organic waffles. In this Instructable, I am going to share my recipe for organic waffles as well as tips and tricks to get the best results.
Ingredients + Tools
Tools:
- Waffle Iron
- Small, Medium, and Large Bowl
- Cups and Teaspoons
- Electric Mixer or Whisk
- Spatula Blender (optional)
Ingredients:
- 1 1/2 cup oatmeal flour or oats
- 4 tsp baking powder
- 1/2 tsp salt 1 tsp peanut butter (any nut butter or spread)
- 1 2/3 coconut milk
- 2 egg whites
- 2 tbsp honey or organic maple syrup
- 1 tbsp natural vanilla extract
- Coconut oil cooking spray
Optional:
- Cinnamon
- Strawberries
- Greek yogurt
Get creative! This is not a restricted recipe, there are endless possibilities for toppings and flavors. Personally, I like fruit and spread.
Making the Flour
If you cannot find oatmeal flour you can make some yourself:
- Add 2 cups oats into a blender.
- Pulse in intervals until a flour type consistency is formed
- Depending on your blender it should take about 2 minutes.
- Place on a bowl and make sure no whole oats appear. If they are repeat steps.
- Place in an airtight container.
It is important to make sure it is finely grated. You wouldn't want any full oats on your waffle.
Preheating the Waffle Iron
Plug your waffle iron into a power source.
Make sure it's on high otherwise the waffles are going to be burned on the outside and raw on the inside.
Combine Dry Ingredients
In a large bowl add oat flour, baking powder, and salt.
Use a spoon or whisk to mix them all together (no need for an electric mixer), and make sure they are all incorporated together. Salt if moist can sometimes stick together, so be careful and do incorporate them.
Add Wet Ingredients
In another medium bowl mix together the peanut butter and coconut milk. Don't add the egg whites just yet.
Egg whites will be added later for the process.
Beat the Egg Whites
Beat eggs until they become foamy. A whisk can be used for this, but an electric mixer always is better to get the best consistency.
This is an essential step in order for your waffles to be soft and fluffy.
Combine Dry and Wet Ingredients
Add half of the wet ingredients to the dry ones and mix when incorporated add the other half. You can use a spoon, whisk or spatula to mix.
It should look like the last picture; liquid, but not soupy.
Fold Egg Whites
Add egg whites into the mix with a spatula, and fold them in.
Spray Waffle Iron
Use the coconut oil cooking spray to coat both sides of the waffle iron, so your waffles won't stick to the pan. Try to spray from a distance, so your waffle won't taste like coconut since it does have a strong flavor.
Pour Into Waffle Iron
Once your mix is finally done, it's time to bake.
Use a spoon, ladle, or simply pour out of the bowl into the waffle iron and make sure it is completely covered, so there is not any holes or empty spaces.
Cook Waffles
Cook waffles for about 15 minutes, or until you believe they are golden brown.
Your waffles can take from 10 minutes up to 25 minutes depending on the heat of your waffle iron, and the thickness it allows them to be.
Top With Your Favorite Ingredients
Once your waffles are done baking, place them on a plate and let them come down to room temperature.
If you're wanting to top your waffles, make sure they're completely cool or you'll wind up with very liquid syrup (or honey) and warm fruit.
Once they're cool get creative and top them with whatever you want, it's recommended you eat them immediately after cooking for guaranteed freshness.
