Organic Fried Cauliflower

Super tasty alternative to fried rice.
Shopping List

-Coconut oil
-2 large eggs,beaten
-salt
-1 cup chopped scallions
-3 garlic cloves, minced
-1 tbsp. finely chopped ginger
-one 2lb head of cauliflower.
-4-5 tbsp. soy sauce
-1/4 teaspoon red pepper flakes
-1 teaspoon sugar
-1 cup frozen peas and parrots
-1 teaspoon rice vinegar
-1 teaspoon toasted sesame oil
1/4 cup chopped cashews or peanuts (optional)
Process the Cauliflower

Run the cauliflower through a food processor to grate it. You could also use pre grated packaged or frozen cauliflower.
Eggs

Add 2 tsp. coconut oil to pan and scramble the eggs with a pinch of salt, then set aside.
The Greens




Add 3 Tbsp. coconut oil to the pan and cook the scallions, garlic and ginger stir often until soft not brown.
After 3-4 min proceed to next step.
Add Together





Add the grated cauliflower, 4 Tbsp. soy sauce, red pepper flakes, sugar and 1/4 teaspoon of salt and cook for 3 min., then add the veggie mix, cook until cauliflower is tender-crisp and the veg are warmed through.
Once cooked, add everything else and mix in the eggs and serve hot. Season with remaining Tbsp. soya sauce if needed.
