Organic Buckthorn Sorbet and Jam

In this instructable I will show you how to collect Buckthorn and how to cook organic Jam and Sorbet out of it.

Gathering the Buckthorn.

First we need to gather that lovely all natural Buckthorn. In Denmark it grows wild on the coast and on the sides of highways. BUT! do not gather the ones from the highway! first of all it dangerous. Second, it's not healthy. the buckthorn plant absorbs a lot of the waste fumes from the cars and that toxic will get into the berries.

The easy way to do it, is to cut the entire branch where the berries are on. Don't worry! the branch will be back next year again, and if you diverse from bush to bush from year to year, the bush will not take any damage doing this.

This way you wont get to many stings from the thornes. Plus the berries is almost impossible to pick of the branch. That is next step!

This tip will save you from hours of work!

Freeze the branches and then just break them off when frozen.

When you have all the berries plus leaves and stuff, then put it in water. This will make the unwanted objects float to the surface and then you can just scoop them up with a spoon or your fingers.

Buckthorn Jam: Ingredients

You will need:

- 500 g buckthorn berries

- 200 g sugar

- 1/2 vanilla rod

- The Juice and grated shell of an orange

ALL ORGANIC OF COURSE!

And at the end you will need a glass jar to store it.

Buckthorn Jam: Add All the Ingredients Except the Berries.

Heat it up until the sugar is dissolved into the liquid.

When the berries is added then let it simmer (not boiling) for about 5 minutes.

Buckthorn Jam: Sieve the Liquid Away From the Mass

When the mass is on the sieve, then gently press on it with a spoon th get even more liquid out.

Buckthorn Jam: Put It on Glass Jars and Serve!

When putting in glass jars, it's important to conserve it by either boiling the jars or "baking" it. See this link for instruction:

Buckthorn Sorbet: Ingredients.

- 150 g Buckthorn berries

- 50 g cane sugar

- 3/4 dl water

- 1,5 tbsp Glucose Syrup or Agave Syrup

ALL ORGANIC OF COURSE!

First boil the water and the sugar together. When the sugar is dissolved into the water then add the berries.

Then let it boil for 5 minutes and sieve it into a bowl. Again like the Jam, gently press the berries when it's in the sieve to get even more liquid out.

When still hot add the syrup and give it a quick whisk to dissolve the syrup.

Now pour the liquid into the ice machine and freeze it.

If you don't have a freezing machine, then add the liquid into a container and put the container into a freezer. then in intervals of 30 minutes take it out of the freezer and stir it around and put it back into the freezer. this will prevent it from crystallizing.

Buckthorn Sorbet: Serve!

This is a very sour sorbet like lemon or orange, so eat it with something very heavy and sweet like a chocolate muffin or a "moelleux au chocolat".
