Orange Flavored Cake

This is an orange flavored cake with a batter and frosting made from scratch. The cake batter is unique as it is sweetened with blue agave and a packet of Tang sugar free mix. What you will need for the cake batter:

1 1/4 cups all purpose flour
2/3 cup blue agave (dry cup)
2 teaspoons of baking powder
1/4 cup milk
1/4 cup unsalted butter, softened
1 egg
1 Tang sugar free drink packet
1 loaf pan that has been buttered and dusted with flour.
1 bowl to mix with
1 fork to mix with

For the icing, you will need:
4 tablespoons shortening
4 tablespoons unsalted butter, softened
1 Tang sugar free packet
1 fork to combine ingredients
1 bowl
1 butter knife to spread icing with.


Make the Cake Batter

Start by adding the flour to the bowl. Add the baking powder, butter and sugar free drink mix.

Add the Wet Ingredients

Add the agave, milk, and egg.

Mix

Mix everything together well. Preheat oven to 350 degrees Farenheit.

The Pan

Use unsalted butter to lightly grease the outside of the pan. Dust with flour. Pour batter in.

Getting the Batter to Lay Evenly

Drop the pan from a short distance on the counter a couple of times. Place pan on middle rack of oven that is preheated. Bake for 35 minutes. Use fork to test if cake is done. Once done, take out of oven and allow to cool.

Making the Frosting

Cream together tablespoons of shortening and tablespoons of unsalted butter. Add powdered sugar and contents of sugar free Tang packet. Combine well with fork.

Frost Cooled Cake

Frost cake by spreading the frosting with the butter knife.

Cut Into Cake and Serve
