Orange Drizzle Cake

I love lemon drizzle so adapted this recipe https://www.instructables.com/id/Lemon-Drizzle-Cake/ and used oranges instead.

Ingredients

Cake:

225g soft butter

225g caster sugar

275g self raising flour

2 tsps baking powder

4 tbsps milk

zest of 2 large oranges

4 eggs

For the drizzle:

juice of 2 oranges

175g granulated sugar.

Mix!

My butter wasn't really soft enough for the all in one method so I started off by creaming the butter and sugar together in the mixer for a couple of minutes first and then added the rest of the ingredients.

If your butter is soft then just go ahead and put all of the ingredients for the cake into a large bowl or mixer and beat well for a couple of minutes.

Bake!

Beat well for about 2 minutes, longer if you're using a spoon.

The mixture should be thick and creamy.

Divide the batter between 2 prepared loaf tins and bake at 160 degrees celsius for 45 minutes.

Mix the orange juice and sugar together and drizzle over the cakes.

This batter yields enough for 2 loaf cakes. Perfect for sharing at work...if it makes it that far!
