OnePot (Home-made) Pink Paneer Masala Fried Rice!



For the Cottage cheese(paneer) fried rice, I used home made paneer. It is an optional process(due to lockdown, I made it at home). You may use store bought cottage cheese as well.
Supplies
Cottage cheese(Paneer)
Ghee/oil
Basmati rice
Tomato puree
Salt
Garam masala (indian spicy masala mix : The most common spices that go into Garam Masala are:Cumin, Coriander, Green and Black Cardamom, Cinnamon, Nutmeg,Cloves, Bay leaves, Peppercorns, Fennel, Mace)
Chopped beans, carrots
Bay leaves
Vertically sliced green chillies
Part 1: Making of Paneer (Cottage Cheese)















1. Take Boiled milk at room temperature
2. Add Required Amount of Lemon Juice to the Milk
3. When the Milk Start to Curdle, Drain It in a Cloth/strainer. Make a Knot & Hang the Cloth for Sometime Until Most of the Water Drains Off
4. After It Is Hung, now Curdled Milk would have turned Into Semi-solid
5. Get some grated beetroot
6. Squeeze out the juice from the grated beetroot
7. Add the juice to the semi-solid cheese and mix it well
8. Now the pink coloured semi-solid cheese is ready to get pressed
9. Place it over the same cloth again
10. Put a knot to the cloth, to get it ready to be pressed overnight
11. Place it in a position in order to get it pressed overnight. I kept a flat stone on top of the cloth for strong pressing. You can see drained out water got collected in the plate below
12. After 8 hours of pressing now, the Pink Paneer(cottage cheese) is ready for frying
13. Fried Paneer can also be chopped into pieces, for further cooking
Part 2 : Making of Paneer (Cottage Cheese) Fried Rice


Step A :
Get the below ingredients ready for cooking:
1. Tomato puree
2. Salt
3. Garam masala(indian masala mix)
4. Beans
5. Carrot
6. Bay leaves
7. Vertically Sliced green chillies
Step B :
To a bowl of half-boiled rice, just added the green chillies, fried paneer and kept it aside.
(Part 2) : to a Pressure Cooker, Add Ghee, Bay Leaves and Fry It

(Part 2) : Add Carrots; Mix It Well

(Part 2) : Add Beans; Mix It Well

(Part 2) : Add Salt; Mix It Well

(Part 2) : Add Garam Masala; Mix It Well

(Part 2) : Add Tomato Puree; Mix It Well

(Part 2) : to the Mixture: Add Half-boiled Rice, Green Chillies and Fried Paneer

(Part 2) : Mix the Content in the Cooker Well (without Breaking the Rice)

(Part 2) : Close the Lid of the Cooker and Keep in Medium Flame for 1-2 Mins; Adding Whistle Is Not Required (it May Make It Into Paste)

Now, Fried Rice Is Ready; Serve With Chopped Onions, Salt and Curd Mixture.
