One Pot Leek and Potato Soup
Very quick and simple, flavourful and delicious creamy soup! All done in one pot!
Supplies
Yield: 6 servings
Total Time: ~1 hour (20 minutes preparation, 40 minutes cook time)
Ingredients;
3 Tablespoons Salted butter or cooking oil
3 Large leeks
4 cloves of garlic, chopped
2 lbs potatoes
6 cups chicken stock
1 cup of heavy cream
salt and pepper to taste
optional - bacon for serving
Prepare the Ingredients
Cut and wash leeks:
cut into small pieces, soak, and rinse well to ensure all the dirt/soil has been removed. Leeks can be quite dirty, due to how they are grown, covered in soil. Be sure to wash carefully
Peel and chop garlic cloves
Peel and cube potatoes
Cook the Leeks and Garlic
Heat up the butter/ cooking oil in a large pot
Add the chopped garlic and the cleaned and drained leek pieces
cook on medium heat, stirring occasionally, until the leek pieces have softened and wilted, approximately 10 minutes. Careful that the ingredients do not burn/brown
Add Stock and Potatoes
Add the stock and potatoes.
Bring to a boil.
Turn heat down to low, and cover and let simmer until the potatoes are soft, easily pierced with a fork.
Purree the Soup
Use an Immersion blender to purree the soup until smooth
A regular blender also works, but be very careful with hot ingredients. Let cool slightly before blending, only fill halfway, and do not seal the blender. Hold lid with a kitchen towel, be very careful of escaping steam and don't get scalded by the hot liquids.
Add cream, salt and pepper to taste
Serve the Soup!
If desired, add a slice of crispy bacon, and salt and pepper to taste!
