One Pot Family-Sized Jambalaya

I love one pot recipes! They're simple to make because you just continue to add ingredients to the pot until the recipe comes together into a delicious meal. And when you're all done, there's hardly any dishes to clean!

This recipe for jambalaya makes a lot - more than enough for a family of 5. The flavor is delicious and the recipe uses ingredients that are easy to get from the grocery store.

Supplies

  • 1 chicken breast
  • 1 pkg kielbasa
  • 1 stalk of celery
  • 1 green bell pepper
  • 1 small onion (1/2 large)
  • 2 tsp minced garlic
  • 6 oz tomato paste
  • 1 T Worcestershire sauce
  • 1 tsp basil
  • 2 1/2 C long grain rice
  • 4 1/2 C chicken broth

Cook the Meat

Cut the kielbasa into slices and cube the chicken breast. Add them both to a large stockpot and cook over medium heat, stirring occasionally, until the chicken is cooked through (about 10 minutes). Add a dash of salt and pepper to the meat while it cooks.

*Note: you can also add shrimp to this recipe if you enjoy seafood

Add in Vegetables

While the meat is cooking, prepare the vegetables by dicing the celery, bell pepper, and onion. Add the vegetables to the pot and stir occasionally while it cooks for 8 minutes. Then add 2 teaspoons of minced garlic and cook an additional 2 minutes.

Add Flavor and Rice

Add the can of tomato paste, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of basil to the pot and mix together. Add 2 1/2 cups of rice and 4 1/2 cups of chicken broth to the pot and mix.

*Note: you can add 1/4 teaspoon of cayenne pepper for a more spicy jambalaya

Simmer and Serve

Allow for the mixture to come to a boil then reduce the heat to low, cover and let simmer for 30 minutes, or until the rice has cooked through. When the jambalaya is done, give it a good stir and serve it up!
