One Pot Chicken Curry

Chicken curry is a dish originating from the Indian subcontinent. Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. This recipe is the easiest recipe for a beginner. It is a very simple and easy dish to make. it is a go to recipe. we have made this recipe with a few ingredients and managed to keep Indian traditions alive with its amazing taste and concluded it in one pot challenge!

Marinating Chicken

For Marinating the chicken, mix the following ingredients:

Here I have taken 1 Kilogram of chicken (with bone) and marinated it by adding:

  • 1 cup fresh thick curd.
  • 2-3 tablespoon ginger garlic paste.
  • Add salt as per taste.
  • 1 teaspoon turmeric powder.
  • 2 teaspoon red chili powder.

Mix everything well and keep it aside for 30-40 minutes.

pro tip:

The more time you marinate the chicken, more juicy and flavorful the meat will be. 30 minutes is enough though.

Preparation

While the chicken is marinating lets prep everything required for this recipe

  • Finely slice 1 medium sized onion.
  • Grind 1 medium sized onion.
  • Finely Chop 2 tomatoes.
  • Cut 2 small sized potatoes in small cubes.

Curry Making

  • Take a pan and heat 4-5 tablespoon oil (vegetable oil or mustard oil). Here I am using mustard oil because here in India it is said that nonveg tastes better when cooked with mustard oil.
  • Add all the whole spices (bay leaf, black peppercorn, black cardamom, green cardamom, cinnamon stick, cloves) to the hot oil and sauté is for a min.
  • Then add the sliced onions and sauté.
  • cook the onions till they are slightly golden brown.
  • Once the onions turn brown add the grinded onion paste and cook it for 5 minutes
  • Add chopped tomatoes and cook till oil separates.

Adding Spices

Adding spices is a spicy affair, specially if you are sensitive to spices, be careful with these since this is a Indian dish, it is medium spicy !

Add the following spices:

  • 2-3 tablespoon of red chili powder.
  • 1 tablespoon of turmeric powder.
  • 2 tablespoon of coriander cumin powder.
  • Add salt as per taste.
  • 2-3 tablespoon of chicken masala.

Mix all the ingredients and cook for about 3-4 mins.

Cooking Chicken

  • Once the spices are added and oil separates, we can now directly add our marinated chicken.
  • Mix the chicken well.
  • Cover and let the chicken cook for 15 minutes.
  • Take the lid off, Add the potatoes and mix everything well.
  • Add 2 cups of water.
  • Cover it and let it cook for 10 more minutes.

Yummy chicken curry is ready!

There is one optional step that you can follow to make the curry taste even better.

Optional Step

This is a optional step, but following this step will make the chicken curry even more tasty.

  • Heat a small pan.
  • Add 1 tablespoon of oil.
  • Once the oil is hot add 1 teaspoon of cumin seeds. Let it pop.
  • Then Add 2 tablespoon of chopped ginger and cook it for a min.
  • Add 7-9 curry leaves and turn off the flame.
  • add this mixture to the chicken curry.

Tada! Chicken curry is ready. Garnish with fresh coriander leaves, Serve hot with rice/ roti and Enjoy.
