One Pan Creamy Spinach and Artichoke Salmon
One Pan Creamy Spinach and Artichoke Salmon is the quick and easy dinner for busy weeknights, yet also fancy enough for company! The creamy garlic Parmesan sauce is reminiscent of spinach and artichoke dip, with the addition of heart healthy salmon! And the best part is that it's all made in one skillet in 30 minutes, so dinner is on the table fast and clean up is easy!
Ingredients and Supplies
Gather and prep ingredients for this 4-serving recipe.
You will need:
- 3 tablespoons olive oil
- 4 (4 oz.) salmon fillets, skin removed
- Salt and pepper
- ½ teaspoon paprika
- 3 tablespoons butter
- 1/3 cup chopped onion
- 1 cup heavy cream
- 2 ounces cream cheese, softened
- ¾ teaspoon garlic powder
- ½ cup grated Parmesan cheese
- 4 cups fresh spinach
- 1 (14 oz.) can artichokes, drained and roughly chopped
- Additional grated Parmesan for garnish
- Large skillet with high sides and cover
- Measuring cups and spoons
- Grater
- Wooden spoon
- Spatula
- Knife for chopping
Prep ingredients: Chop and measure onion. Grate and measure Parmesan cheese. Drain and coarsely chop artichokes. Set all aside.
Season and Sear Salmon
Heat olive oil in skillet over medium heat until oil is hot.
Season salmon fillets with salt, pepper and paprika. Add salmon fillets to oil in pan and cook 2-3 minutes, until salmon is lightly browned. Carefully turn fillets over and continue cooking 2-3 minutes longer, until salmon is cooked through. Remove salmon fillets from pan and set aside.
Cook Onions
To the same pan, add butter and chopped onions. Cook over medium heat, 3-4 minutes, stirring often, until onion is transparent and butter begins to brown.
Add Cream, Cream Cheese and Garlic
Add heavy cream, cream cheese and garlic powder. Cook over medium heat, stirring constantly, until cream cheese has melted and sauce is smooth and creamy.
Add Remaining Sauce Ingredients
Add grated Parmesan, spinach and chopped artichokes. Cook 3-4 minutes, stirring often, until spinach is wilted.
Return Salmon Fillets to Pan
Return salmon fillets to pan. Cover and cook over medium low heat 2-3 minutes, until salmon is heated through.
Plate and Serve
To serve, spoon spinach, artichokes and sauce onto plate and top with a salmon fillet. Garnish with additional grated Parmesan cheese if desired.
