One Mug Omelette-in-a-Cup

Have you ever wanted an omelet in the morning, but you hadn’t had the time to make one? Have you ever wanted your eggs scrambled, but everyone else wants their eggs fried? Do you ever think you need more vegetables in your diet? Then this is the specialty egg recipe for YOU. Simple, delicious, nutritious ingredients include lots of veggies, eggs, and a splash of milk. With so many options, your breakfast will never be the same! Mix-and-match over a dozen ingredients! The combinations are endless!

Supplies

- One or two eggs per person.
- Vegetables: Peppers, onions, tomatoes, mushrooms, or other vegetables. Mix and match!*
- Meat: Salami, turkey, ham, bacon, etc. You decide!
- Pepper and salt (the other kind of pepper).
- Shredded cheese, any kind that melts.
- Milk, about a teaspoon per egg.

*We made ours with ham, peppers, onions, tomatoes, 1 egg, milk, and Mexican Blend cheese. Salt and pepper to taste*

Ingredients

This decadent masterpiece can only be crafted with the finest of ingredients. That means, use fresh vegetables when possible. Select your ingredient like you are making an omelette. Only the finest of veggies, cold cuts (lunch meat), and eggs will do! Or maybe not. It’s perfectly fine if you use regular old veggies, prepackaged lunch meat, and mass-produced eggs. For this recipe we will need:

  • An assortment of vegetables; to taste. No final amount.
  • One or more different kinds of meat. Or none if you’re vegetarian, pescatarian, or just don’t like meat.
  • 1 or 2 eggs. Depends on the size of your mug, how much other ingredients you have, and how much you want to eat. Note: This is probably the only thing that can’t be vegan in this recipe. If you must, use egg substitutes used in vegan scrambled eggs. It just might not have the same airiness or flavor.
  • 1 tsp. of milk per egg. You do not need a measuring cup. 1 tsp. is about a quarter inch layer of milk on the bottom. Plant based milks are probably okay. If you use them in scrambled egg or omelettes, or just cook with them, then they’re fine. They might affect taste, though.
  • Cheese. Use enough to cover your mug. Or, just sprinkle in a small handful.
  • A mug. Choose a microwave safe mug that is about 1 cup (8 ounces) or more. This is just a precaution, the egg will probably not get that high, it has all of the other ingredients weighing it down. If you are using 2 eggs, use a cup that can fit 12+ ounces.
  • And last, but not least, a mini whisk or a fork. This will be to mix up your egg.

Chop Chop!

Dice your ingredients. Keep them in about quarter inch chunks, that way they won’t dissolve when cooked, and you still get some texture. Here’s a good Instructable.

Milk N’ Eggs

Get your milk or other milk-like liquid. Even water’s ok! Also get your eggs. Put a teaspoon, or about a quarter inch, or about 6 millimeters of liquid in the bottom of your cup. If you are using 2 eggs, put in 1 more teaspoon/another quarter inch worth of milk/another 6 millimeters worth of milk. Then, crack your egg/s in. Here’s a great Instructable showing how.

Whiskin’ in the Wind

This is super fun! After you have your milk and eggs together, take a mini whisk or fork, and beat them together. To do this, rapidly move the whisk in clockwise or counterclockwise motions. To beat it with a fork, use back and forth motions. Remember how to whisk/beat, or refer back to this step, because we are going to need this tool later on.

And a Sprinkle There...

This is where it all comes together. Take your ingredients and evenly distribute them to your liking. It doesn’t matter if it all clumps together, as you will see in a second.

Round and Round

Before you microwave your omelettette (a small omelette), give your egg/s another whisk to evenly distribute your extra ingredients.

Microwaving in a Minute

Put your mug in the microwave, don’t put in multiple mugs. If your microwave has a 30-sec pulse option, use that. It will take approximately a minute per egg. Times may vary depending on wattage. After you’re done, take out your eggs. Be careful, it’s hot! Then enjoy your omelette with the rest of your breakfast.
