One Minute Muffin

I found this recipe on the Internet after hearing friends talking about fixing a high fiber, yet moist, soft, great tasting muffin for their kids to eat on the way to school. It's a GREAT "Finger Food" to start the day off right!

Step 1 Recipe

RECIPE
1 Tablespoon Butter,  Margarine, or oil of your choice.*** IF unsalted butter or margarine is used add a pinch of salt
1 Egg or equivalent of Eggbeaters
1/4 C Flaxseed meal
1/2 teaspoon Baking Powder
1 teaspoon Cinnamon or other spices
Sweetner of your choice. I used about 1 Tablespoon of Splenda

EQUIPMENT
Microwave safe container *** A 1 cup glass measuring cup works well
Measuring cups and spoons
Microwave

Step 2 Method

Melt Butter, or margarine in the container you'll bake your muffin in.

Add egg, or Eggbeaters, and wisk slightly

Add all the rest of the ingredients

Mix

Step 3 Bake (Microwave)

The original recipe I saw said to cover with plastic wrap, but I no longer put plastic in the Microwave so I just leave it uncovered and bake it for ONE MINUTE (times may vary slightly by wattage on different microwaves) do not overbake.

Step 4 Remove.....EAT (Variations)

Remove from the microwave. It will pop right out of the glass cup.

Serve with butter, peanut butter, or jam

There are TONS of variations for this recipe on the Internet. Search for One Minute Muffin, or OMM. Another favorite of mine uses chocolate chips!

My DH likes a savory version of this, with no cinnamon or sweetner, but with onion powder, or basil instead. This can be toasted after baking, and slicing, or can be used as a pancake batter of sorts.
