One Minute English Muffins

Perfect for a low-carb lifestyle, these grain-free and yeast-free muffins are quick and simple to make meaning there is no reason to go without bread anymore if you are gluten sensitive, diabetic, or just want to eat healthier. They are a delicious side dish for that leftover turkey soup, or even made into sandwiches for lunch. With just 7 ingredients and a spritz of cooking spray, this recipe makes so much sense.

Gather Ingredients

Ingredients (this recipe makes 2)

2 tbsp almond butter

1 tbsp butter

2 tbsp almond flour

1/2 tsp baking powder

1 tbsp unsweetened almond milk

1 egg beaten

1 tsp powdered whey protein (optional) cooking spray

Butter and Almond Butter in Bowl

Put the almond butter and butter into a small microwave-safe bowl. Microwave for 30 seconds and mix until smooth. Cool.

Add Dry Ingredients

Add the almond flour, whey protein powder and baking powder to the bowl, then mix well.

Add Milk and Egg

Add the milk and egg and stir until combined.

Microwave for One Minute

Prepare 2 ramekins by spraying with cooking spray. Pour the batter into the prepared ramekins. Place on opposite sides of the microwave and cook for 1 minute. Allow to cool a few minutes before removing from the ramekins. Slice in half and toast until desired doneness.

Each muffin (that's both halves of one ramekin) has approximately 2 grams of carbs, depending on your whey protein, which may add a tiny bit more. Feel free to substitute unsweetened cashew butter, sunflower seed butter or peanut butter for the almond butter. Any milk will work. I've used almond milk, whole milk, and even cream. They all work well. If you prefer not to use a microwave, you can use a regular oven. 350 degrees for 10 minutes or until a toothpick inserted comes out clean. These muffins are grain-free, gluten-free and can be nut-free and dairy-free, if you choose. Diabetic-friendly!
