Octopus With Potatoes Salad
Since some people told me that I'm very good at this kind of dish, I decided to share the recipe with people who wants to learn it.

For this recipe you will need:
- potatoes (350g)
- octopus (1200 g)
- parsley
- garlic
- salt
- extra virgin olive oil
(optional: tomatoes 100 g)
Boil Potatoes
Put potatoes in a pot, then cover them with cold water, then put the pot on the stove.
Cover the pot with a lid then wait for the water to boil.
When the water is boiling, wait for 30 minutes, then test if potatoes are cooked with a fork. If the fork reaches the center of the potato, then they are ready.
A perfect variant (even better than boil them) is to cook them with steam.
Prepare Potatoes
When potatoes are ready, start to peel them. Is it really important to peel them while they are still hot.
Then cut potatoes in pieces, and let them cool. To avoid that they stick between them, occasionally add raw extra virgin olive oil.
Peel the garlic then cut it in small pieces and put it in the potatoes. Add some salt and mix it.
Prepare Octopus
Put some water in a pot, then let it boil. In the meanwhile, clean the octopus head and remove eyes and beak.
When the water is boiling, put the octopus in the pot and let it boil for 30 minutes. A perfect variant (even better than boil) is to cook it with steam.
After that, cut the octopus with a scissor, then add the parsley, some other salt and extra virgin olive oil.
Finish
Mix it up and let it cool.
This dish is good both cold and hot, but actually I prefere it cold.
A good variant is to add some cherry tomatoes and mix it up to give some sweetness to the dish.
